Here, the chef uses Serbian ingredients (including some produced in-house) to create dishes that combine the flavours of Serbia with French techniques and inspiration and Italian style. The cockerel cooked in Serbian Pinor Noir and port, served with carrots and various sauces, is completely French in style yet showcases different local ingredients, while the lemon tart bursts with the flavour of Italian lemons.
