If you go to Rome to eat pasta you will have 12 different plates of the same great pasta, and this place was my favorite out of those places. Cacio and Amatriciana were both 11/10 for me, but the Cacio, a dish I almost never care much about, gave me my one and only Ratatouille moment of Italian eating.
