I'm so excited to have stumbled upon 4296 for our last meal in Canmore/Banff! Our trip ended on such a high note.
My party of 3 didn't have a reservation, but we went early and they were able to seat us in patio/outside area. The dishes here are meant for sharing, so my party ordered a few items including:
1) Crispy Egg - Absolutely enjoyed this more than I was expecting. The nice crispy exterior paired with the unique aioli was a great starting dish.
2) Prawn Tempura - I usually don't care for Prawn Tempura in general, but this would be an exception. The jumbo prawns were so juicy. More importantly, they made the batter just right and didn't overcoat the shrimp. The shrimp was still the star of the show!
3) Rainbow "Poke" - I was a little skeptical because this dish was vegetarian, so there's no real fish. However, this was one of my favorite dishes. They say you eat with your eyes and this was an absolutely beautiful dish! The "ahi tuna" and "salmon" looked so real, but was made of seaweed! When paired with all the other components (edamame, cucumber, mango, passion fruit gel, rice, shogun sauce), you are really reminded of a traditional poke. If it's on the menu next time, I'm definitely ordering this again!
4) Beef Tartare - this was a very unique take on a deconstructed hamburger that I wasn't expecting. The flavors are definitely reminiscent of hamburger and the beef tartare was fresh. Solid dish!
The outside patio didn't have too much decor, but the interior felt comfortable. I would definitely recommend a reservation early if you want to have a table inside.
As mentioned, this was one of my favorite meals of my short vacation! I'll definitely want to come here again! Fun fact - the restaurant is named 4296 because that's the elevation is Canmore in feet.
