The Snail was absolutely hopping within 15 minutes of opening, and we were lucky to snag a "seat" without reservations. We got a standing room only, birds-eye view of the pristine kitchen's artistry, and would have stood for a second round if the meal and experience weren't perfectly satiating. Food - amazing! Started off with Scallop Ceviche, which took us back to a certain seaside meal in Brittany. The flavors that develop as you taste are rich in memories and pure flavor. Lamb tartare, with its crackling accompaniment, delivered flavor and texture that outclasses any tartare anywhere. Think yourself into the Crab Ravioli, little cups of pure flavor, in a bath of a beurre blanc worthy of a five-star French restaurant. Light, seaworthy, and just enough for a spoonful with each ravioli. And carnivores won't do themselves any favors by conjuring up a whopper...2 patties of burger, with the hint of char on four surfaces... tucked into a perfect brioche bun. If there's room for dessert, go for Austin Baker's wife's light, layered gateaux or a sundae dripping with perfect chocolate syrup. All bookended with a flinty Loire Valley Sauvignon Blanc.
