Plan a Trip Around Panama's Geisha Coffee

"A to Z is a diminutive speakeasy-style restaurant in Panama City's Casco Viejo, run by chef Ariel Zebede. It offers a seasonal multi-course tasting menu featuring Panamanian products, including coffee. The restaurant accommodates 14 guests at the chef’s table on select nights and serves eight-day fermented Elida Estate Geisha with a dessert course and as a digestif." - Lauren Mowery

Everything was amazing. The food, the drinks, the service, and the atmosphere. First time I’ve tried raw tuna and I was not disappointed. I’m not adventurous when it comes to food but I went in with an open mind and was blown away by the flavors. Would definitely go back.

Amazing experience and the chef is really a delight. The food was fabulous and was a combination of very intentional local ingredients and some molecular cooking. The chef did a great job of explaining the dishes and there was also a visual element to the playing and presentation that I did not expect. I highly recommend it. I think their caliber compares well with some of the Michelin star restaurants that I have dined at.

Dining at A to Z is more than a meal—it’s an intimate journey through local flavors, reimagined with modern flair. Chef Ariel’s deep respect for local ingredients shines in every dish, transforming beloved classics into something both nostalgic and innovative. Each course is personally introduced, revealing the origins and inspirations behind the flavors. Expect just-caught seafood, farm-fresh produce, and unexpected twists that delight without losing their essence. The setting is warm and unpretentious, letting the food take center stage. A to Z is a love letter to the local region, where tradition meets creativity in every bite. A truly unforgettable experience.

Give this place a Michelin star! Or two!! It was by far the best meal I've ever had. Every dish was a different trip. Incredible creativity and diversity on the plates. Great service and overall experience. I cannot recommend it enough.

Quite possibly the best dining experience of my life! Just spectacular flavors, presentation, and service for all 10 courses. Chef Ariel was a perfect host, bringing stories and humor to each dish. The intimate atmosphere (14 people) gave a feeling of dining with close friends even though we had just met. Of all the places in Panama, this is an absolute must if you enjoy amazing food!

Thank you, Chef, for a perfect dinner the last day in Panama! I loved the home grown and local ingredients. My favorite dish was the triple tail fish and my favorite dessert was the sticky toffee pudding! What a memorable night!!

Absolutely incredible dinning experience. The ambience is wonderful, and well thought out. The lighting is perfect, the seating intimate but allows for a bit of interaction if you’re after that too. The drink selection is top notch, and the level of quality in each one is unmatched. The service cannot be any better, you wait for nothing. You every need is met instantly, almost before you even realize it. The host is super personable, and you can tell he is sincerely thankful to serve others his incredible tastings. I felt like I was his special guest, although we never met prior. Each dish was carefully created, with local ingredients and only the highest of quality. My favorites were the bread (I know, bread… like really?!?! But yes, it was incredible paired with a hummus he created) Another was the mini lobster roll, it truly melted in your mouth and was a burst of rich, creamy and subtly salty flavors all at one time. The ribeye, I can say it was the best I have ever had, anywhere. The flavor of the meat was unreal, and the smokiness was on another level. O, I almost forgot the fish… I cannot remember what kind it was, but it was coated and truly was so, so savoring… I think I can honestly say, this was the best tasting food I have experience yet in all my traveling. I don’t leave a lot of reviews, but had to let everyone know how truly great this place was.
