12 New Hotels For Winter Weather Travel in Europe - AFAR

"A 16th-century retreat recently renovated and reopened in 2023, offering 43 modernist rooms clad in blond wood set in the cobbled town beneath cathedral belfries and the Dolomites. Rooms vary from alcove windows overlooking the Eisack River to private garden terraces, while plastered corridors nod to the building’s medieval past. The Tagesbar is noted for excellent coffee, pastries, and Aperol spritzes, and a sleek rooftop thermal pool and sauna provide ideal soaks after exploring the nearby Plose ski resort’s 26 miles of piste." - Adam H. Adler Historic Guesthouse (Brixen, Alps / Dolomites) Verified Reviews | Tablet Hotels

"In Bressanone's heart, centuries-old walls along the river promenade contain a 43-room guesthouse, one minute from the cathedral square. The building's historic bones, vaulted ceilings and ancient stone, frame thoroughly updated interiors that favor simplicity over costume drama. Up on the roof, a spa with an outdoor pool offers views of the white tower and surrounding Dolomites. The ground-floor day bar serves guests and locals alike, while breakfast spans a generous buffet. Central yet quiet, historical yet refreshingly short on rules about how you are meant to spend your time." - Tablet Hotels

We stayed at Adler Historic Guesthouse from 4th to 14th August, and it was truly one of the best hotel experiences we’ve ever had. The location is excellent — surrounded by charm, easy access to the town, and beautiful mountain views. The staff were exceptionally pleasant, supportive, and genuinely friendly, always ready to help with a smile. Our room was spacious, comfortable, and very clean, with the added bonus of air conditioning which was a lifesaver in this summer weather. Housekeeping kept everything spotless, and the overall atmosphere of the hotel beautifully balances historic character with modern comfort. The breakfast was outstanding — a wide variety ranging from fresh healthy fruit to delicious eggs, cheese, and other local options. It was one of the highlights of our mornings! For the level of comfort, service, and quality, this hotel is also great value for money. I would highly recommend Adler Historic Guesthouse to anyone visiting the region and I sincerely hope to return again soon. A big thank you to the team for making our stay so memorable.

I had a wonderful experienceduring my recent stay at hotel. From the moment I arrived, I was impressed by the exceptional customer service and warm hospitality of your staff. Every member of your team went above and beyond to make me feel welcome and comfortable. Their genuine kindness and willingness to help with any request made my stay truly special. The attention to detail and personalized service were second to none. I will definitely be recommending your hotel to friends, family, and colleagues, and I look forward to returning on my next visit to the area. Thank you again for everything.

I’ve been traveling from Dobbiaco through the mountains and ended my journey at this phenomenal hotel. I can’t say how exceptional this experience has been, from the rooms to the service to the breakfast and spa facilities. Excellent walking location but also quiet, never slept so well in my life. Hands down the best place I’ve stayed in years and can’t wait to return!

The hotel has a perfect location – right in the center, with everything close by. Parking is provided, you just need to drive there (I recommend checking the map in advance so you know where to turn). All the staff are extremely professional, friendly, always smiling, and ready to help. The rooftop wellness is a pleasant bonus, and the breakfast is excellent and plentiful. The hotel is cozy, and the rooms are stylish. If we come back to Brixen, we’ll definitely stay here again.

This hotel is too good. Seriously! We loved it from the very first moment: great and friendly service, great location, very clean, great view from the panorama rooms, excellent spa facilities and a delicious breakfast with local products. The affiliated wine bar and the Finsterwirt Restaurant are also amazing in terms of service and food/drinks. We will definitely be back in Brixen and stay at Adler next time. Simply amazing...

In middle of historic Center, near bus and train station. I loved the personal hand written welcome we found in our beautiful room. Staff was very friendly, helpful and cheerful. I would come back again.

I booked this hotel thinking I would rent a car and drive up. Unfortunately, I did not realize that none of the cars available for rental were automatic, and I do not know how to drive manual. Without a rental car, I had no other way to get there. Within 30 minutes of making the initial hotel reservation, I called to cancel. While there was no cancellation window since the reservation was for the next day, I expected them to do me a courtesy of refunding since it was an honest mistake and the room was only held for 30 minutes. They refused and I am now out almost $725 CAD, while they will profit for doing literally nothing. Not impressed.

Google
Beautiful old hotel in the centre of Brixen/Bressonne. Stunning rooms and views, fantastic food, particularly breakfast. Make sure to go for an omelette or Eggs Benedict for breakfast. Reception very friendly and helpful. Would highly recommend the hotel as a base for exploring all or the beauty of Brixen and the surrounding mountains.

Yelp
The only window in our dark room was looking into a light shaft. The carpet must have been 25 years old and was very stained. Truly disgusting. The room was very dark and the light bulbs were so low in wattage it was hard to see. Don't accept room 310!!! Stay elsewhere.

Yelp
The hotel maybe does not have all the features for a 4 star hotel. The Goldener Adler deserves 5 stars though for its position, for its tiny but very panoramic sun-deck, and mostly for their very friendly staff. We were a party of 6 and they accommodated all of our wishes.
