The Best New Restaurants in the World: 2024 Hot List

"At this sprawling space—an erstwhile clubhouse for civil servants—in Singapore’s leafy Dempsey enclave, chef Matthew Orlando (who used to pilot Copenhagen’s influential Amass) is continuing his mission to make circular cooking as natural as, well, breathing air."

We were excited that AIR is coming to Singapore and have always wanted to try this place out. We took the opportunity with my wife's birthday and decided to celebrate here. This place is kind of difficult to find in the first place, the entrance to the walkway is kind of obscure, may be it should just put a simple sign that say, this way to the AIR restaurant instead of a logo, which for first timer may not be obvious. We ended up walking towards Long Beach restaurant and going round by the back of the restaurant. We decided to take the set menu, the starters were great! The prawn with rice cracker is kind of unique and it was very nice, my wife have a non-crustacean starter, squid with tuna fish and it was delicious too. The other starter, fried oyster mushroom is just so so. The main is the mackerel fish and roast chicken. The fish was really good, but the chicken I found it too tough and not tender enough, especially with the bones it was a hard work to extract the meats. I had the house wine and the Merlot was so bad that I asked for a change and was given a Spanish wine which was really good. The dessert was good, as I don't really eat dessert but according to my wife it was really good.

I booked this place for dinner recently to celebrate two birthdays. Two hours before dinner, the rain was pouring heavily and I was concerned it would be difficult to get to the restaurant knowing it's at Dempsey Hill and it's far from the center. It was instantly resolved after exchanging messages with the restaurant via Whatsapp, giving proper instructions to a semi-sheltered way via Long Beach restaurant. I went in with no high expectations and was pleasantly surprised with the tasty food. My friends ordered the dishes for sharing and for starters, we had the Purple Potato Bread with butter, Oyster Mushrooms and Prawns Bakar. I loved the Oyster Mushrooms with their lightly battered crispy mushrooms and coffee glaze. The Prawns Bakar had puffed rice that added an interesting texture. The Potato Bread was indeed purple and it was chewy and went well with the whipped butter. The winner of the meal was the Stockyard Wagyu. The beef was well seasoned & perfectly cooked and the hollandaise sauce that came with it was so delicious & addictive, I kept going back for it. We also had the Whole Grouper, which was all right, and the Wok'd Garlic Shoots, which we all found too salty. Of course, there's always room for dessert(s). We only had different ice creams or gelato to choose from, which we thought was quite limited. We ordered three and since I indicated it was a birthday celebration, one dessert came with a birthday candle. We ordered Bubur Hitam Gelato, Cocoa Husk and the Kaffir Lime Gelato. All three were good, I think the best one was the Bubur Hitam Gelato. Can't really say much for the interiors or the surroundings because it was evening time and it was raining. My only complaint was the toilets look worn out and the cubicle doors need a refinishing. Also, one of the cubicle doors doesn't lock properly.

Awesome friendly and detailed service from all staff who have served us today! It is a really beautiful place for a special occasion! Recommend the fermented bread, pumpkin main, grouper main, shrimp starter, the rest of the dishes were good too and a good portion in total:D

This place gives off the Potato Head Bali vibes. Great food, good portions, open grill concept. Good place to chill and hangout. Service managers are really knowledgeable about their ingredients… Limited choice of desserts but they have wonderful ice creams with unique flavors and ingredients. Location is accessible via a short walk on a pathway beside Long Beach Dempsey carpark.

Love the atmosphere for breakfast. The lush, open setting and modern design create a relaxing meal experience, complimented by friendly staff and farm-to-table transparency in sourcing. Meat free options (w eggs) includes - avocado toast - potato croquette - kimchi tamago toast!

Had a great dinner at Air CCCC! The meal started strong with their freshly baked bread and flavorful butter. The fried oyster mushroom was crispy and packed with umami—definitely a fun appetizer to share. The mains were solid, with the grouper being the absolute standout—beautifully seared with crispy skin and served in a bright, flavorful sauce. The chicken and mackerel were tasty as well, but the grouper stole the spotlight. Dessert was another high point. The ice cream sandwich was indulgent, crunchy, and perfectly balanced. The lime gelato and black rice ice cream were also refreshing and unique. Service was friendly and the atmosphere was modern and cozy. Overall, a very enjoyable dining experience. Would definitely come back—especially for the grouper and that amazing ice cream sandwich!

The cocktails and starters stole the show with vibrant flavours paired in ways that managed to be familiar yet fresh. It could be that our expectations had been raised by then, so when we had the mains, we felt they were really nothing to write home about. The next time (because I'm likely to go back), I'll probably order all the starters, the Three Sisters cocktail (that I loved), and try another (they all look fabulous). Oh, I'd be remiss to forget this - the grounds are stunning. This is the kind of place you'd want to visit at least once for the experience.

Celebrated Valentine's day at AIR and while the Chef's choice menu was excellent (will definitely return for the desserts), the real stand out here is the impeccable service from the AIR waiters and bar staff. Very cheerful and funny bunch (especially Harry who brought us lots of laughs!) who made our night all the more memorable.
