The name of this place is a little misleading - it's not really a museum, but more of a cheese shop with a bottom floor "museum" telling you about how cheese is made, and a photo-booth where you can take some pictures with some props and email it to yourself.
You don't have to pay to go downstairs to see the "museum" but it would take 5-10 min to go downstairs to read a bit about the history of cheese and how it's made.
The upstairs has probably 30-40 different types of cheese to sample (the samples are cut into tiny pieces) - but there are different goudas aged differently, gouda cheese flavored differently, and some other cheeses with sheep's milk, a truffle cheese, beer cheese, and smoked cheeses.
Everything is packed and ready to fly, and you can bring these in your checked or carry-on luggage. It will stay okay for a week or so, so it can travel home with you - once you get home, put it in the fridge. Most the staff is really friendly and knowledgable, but there were cheeses in a refrigerated section that I wasn't sure needed to stay refrigerated (why was it refrigerated in the store) and if I could travel with it. I asked one guy who gave me a snarky, "Can't you read the sign? Everything is travel-friendly" response. I could have done without the snark - it was a valid question if it was refrigerated in the store.
Overall, I did like sampling the cheeses here and bought a chili / spicy gouda cheese to take home, which I've been enjoying. Prices are pretty fair. Not worth trekking across town to come here (since you can try cheeses at most cheese shops in Amsterdam), but if you're in the area, it's worth a visit. Or if you're hungry and want to sample cheeses as a free snack, this is a good place to come. You'll probably end up buying something to take home!
