We visited for drinks and were blown away by the atmosphere, service and cocktails. Every cocktail was crafted beautifully and tasted amazing. Staff were all too happy to come and explain the cocktails and how the establishment came about. The overall vibe and service made it a great experience. Highly recommend Apollonia for anyone looking for a stand out night.

This is a beautiful basement bar in Sydney. We arrived around 9 pm on a Saturday and had no trouble finding a table. The service was quick and efficient, and the drinks were absolutely top notch. The only major letdown was how stuffy and hot it was inside. They seriously need to address the air conditioning. It's a fantastic bar otherwise, but the heat really spoiled the experience.

Apollonia is one of Sydney’s best-kept secrets — a moody, romantic underground bar tucked beneath Hinchcliff House. From the moment you walk in, the atmosphere transports you somewhere cinematic, with warm lighting, deep leather seats, and the kind of old-world Sicilian charm that makes you want to stay for hours. We came here for a drink before going to Lana upstairs for dinner. I ordered the Sylvester Stallone cocktail and it was absolutely phenomenal — bold, balanced, and packed with character (just like the name suggests). It was one of the most memorable drinks I’ve had in Sydney, and you can really tell the bartenders take pride in every pour. The cocktail menu is full of personality, and the staff are more than happy to guide you based on your preferences. The service was impeccable — friendly, knowledgeable, and perfectly timed. The bartenders knew their stuff, and their passion for the craft really elevated the whole experience. It never felt rushed, even on a busy night, and the attention to detail was spot-on. While I didn’t dive into the full food menu, the snacks and small plates on offer were well thought-out and paired nicely with the drinks. It’s a perfect spot for a pre-dinner cocktail or a late-night wind-down. If you’re into great cocktails, intimate settings, and that elusive mix of style and soul, Apollonia is a must-visit. I’ll absolutely be back, No split billing, and it can get very busy at times.

A must visit. This week on my trip I was walking around the city and stumbled across Apollonia, and as soon as I stepped in I fell in love with the place, the music, the lighting, drinks list and overall ambiance was stunning. A truly unique and carefully curated cocktail list alongside other exquisite drinks, I was blown away at the options and the delicious focaccia I had as a side dish also. But the best part was the incredible bartender Sasha, who was extremely kind, welcoming and knowledgeable about the menu and was just an absolute pleasure to talk to. So thank you so much to all the staff at Apollonia, and I genuinely cannot wait to come back again.

Moody yet cosy, we enjoyed our time here at the Aperitivo Hour! Staff were friendly and came by often to check if we needed anything. Loved the happy hour selection of the high ball and spritz. Snacks were just enough—we had some oysters and small baos!

We have tried a multitude of venues across Sydney’s CBD. And after our first visit to Apollonia we knew instantly that it was our new favourite. The food menu was divine, we ordered a heap of plates to share and were so pleased with the choices. The drinks menu was so interesting, well thought out and delicious. We loved the aesthetics, thought and flavours that went into absolutely all of them. The atmosphere of the venue was super cool. We had a blast listening to the awesome music in the background, staying toasty warm despite the raging storm outside and admiring the interesting decor. And of course the staff were lovely - very knowledgeable and enthusiastic about the entire menu, and a tonne of fun. We will be back again in no time, hungry for more!
