I’ve been eating assiduously across Hanoi. And the food we made ourselves at Apron Up was amongst the best I’ve had in the 6 times I’ve been to Vietnam. I’m thinking of the grilled meatballs, the pho bo, the fried spring rolls, the egg coffee. If they could, in 3 hours, teach us newbies to make these so deliciously, they must be doing something right. It was all easy, breezy, fun, not stressful or difficult, with obviously a small army of hardworking staff keeping everything clean and humming, while still letting us feel like we really were doing the cooking ourselves. I enjoyed learning from Emmy. In the kitchen setting, this is was actually one of my opportunities to have a conversation with a young Hanoian to learn how they feel about life and their future in Hanoi.
