There is so much to say about every detail of Aubergine that I might not have enough room. Everything was executed with the utmost care and professionalism. We were greeted at our taxi by the maître d who welcomed us into a warmly lit, elegantly decorated dining room. It was our 25th wedding anniversary; we’d made reservations ahead of time. We were guided to a lovely and private table on the 2nd tier. The service was very formal so prepare to be pampered. The amuse-bouche set the bar for the evening. A pairing of an herbaceous pate with beef carpaccio over micro herbs, vegetables, and a deliciously light dressing. This chef knows how to create the most refreshing, unusual flavors that just burst in layers in your mouth. Every course (we had the 3 course prix fixe) was made with real love and precision mixed with a touch of daring and unexpected combinations of ingredients. The results were unlike anything we’ve had in a very long time, and we are international foodies originally from NYC. The grouper was exquisite. The beef short rib was mouthwatering, and the appetizers - the sweetest, freshest scallops (4) I think I’ve ever had, and my husband’s pork belly was amazing. I had the cheese platter and my husband had the deconstructed molten matcha cake for dessert. The staff came out and wished us happy anniversary and we enjoyed our scrumptious 3rd course sighing and smiling together. The staff are so attentive and truly care about the service they give. Thank you for a most memorable anniversary celebration!

I celebrated my birthday at this restaurant as a surprise from my partner while we were traveling. From the moment I arrived, I felt truly cared for. There was another group celebrating a birthday as well, but they were seated separately, which made it feel like we had the restaurant all to ourselves. The restaurant offers 9, 7, and 3-course menus. We chose the 7-course option without the wine pairing. Each dish was beautifully presented—almost too beautiful to eat! But every bite was just as delicious as it looked. I’m not usually a big fan of fish or lamb, both of which were on the menu, but I decided to challenge myself and give them a try. To my surprise, they turned out to be my favorites of the night! The flavors were incredible, and I loved every course. The most touching moment came at the end. As my dessert arrived, the background music suddenly switched to “Happy Birthday,” and the staff, along with the neighboring group, started singing. I may be a grown woman, but in that moment, I was so moved. My dessert came with a candle, and the staff even took a photo of us to capture the memory. Thank you so much to everyone at the restaurant for making my day so special. It was a night I will never forget!

One of the most sublime meals I’ve ever had. The Hokkaido scallops, omg. The Vietnam pot au feu curry. It was brilliant cooking with love and care. This place needs a Michelin star!!! Unfortunately it was empty apart from us, which I’m astounded by. The food was epic, and we were pampered by the staff. My only criticism is the food could have been a bit slower between courses. Thank you beyond x

A unique experience, more for tourists. The entrance was not very obvious, and the grab car had to do a u-turn. We were the first couple there when we arrived, and another couple joined us later. The food presentation was nice, but food was not very WOW. Wanted the 9 course meal but some ingredients were not available so we changed to 7 course. Our favourite for the night was the lobster tail custard.

Certainly a unique meal in Vietnam. We had the 7 tasting menu, and each course is quite an experience. They took time and thought into it, and I enjoyed it. I havent had anything like it. It's a but mixed fusion and contemporary style. They also have very attentive service, all smiles and detail oriented. The restaurant is quite fully booked, of tourists, but they were all quiet and respectful of the atmosphere.

Whilst in Hoi An, we made a reservation at Aubergine49 being recommended it by a friend. WOW! We arrived in our Grab and was met by a friendly member of staff who stopped traffic so we could cross the road. We were then seated and shown the menu. We chose the 9 course taster menu with the paired wines to drink. This was more than just a meal, it was an experience, and an amazing one at that. Every course was unbelievable and the attention to detail impeccable. I cannot give it enough praise. All of the staff were friendly, polite and helpful and a credit to the restaurant. If you come to Hoi An and want something special, make a reservation here and be prepared to be wowed. It really was an evening the wife and I will never forget.

Very good and unique culinary experience. We ordered the set menu, and enjoyed every bite. The service was impeccable. The only thing is the water is not free and pretty expensive (40k for a 0.5l bottle), which seems pretty weird considering the price of the meal - I've seen places way cheaper that offer free bottled water. The food is definitely worth it though.
