I love food trucks, and I LOVE Thai food, so I was pretty excited to try this food truck. They have all of your standard Thai stir fried noodles, as well as some curries, and due to the nature of Thai food they do have a good amount of vegetarian options. Our group had the pad thai, both with tofu and with chicken, the pad seeuw with tofu, and the drunken noodles, as well as both the tofu and the shrimp spring rolls. It takes a long time to get your food here. Obviously cooking quarters are cramped in a food truck, but it almost seemed like they were only firing an order once they were done with the last order rather than firing multiple orders at once, so it took at least 20 minutes for the first of our party to get an order and about ten minutes in between each order. Food trucks that I've been to in the past are definitely speedier than that. I probably could've anticipated that slowness if I'd read the other reviews in depth beforehand, but there aren't *that* many food options in the area so we didn't really do our research.
Onto the food itself, one huge positive for this place is that the portions are huge. I've got quite an appetite, and we came here for a delayed lunch after a long hike, and I still couldn't finish the whole thing and took home the leftovers for a second meal. One portion could probably feed three people of an average appetite.
My lunch buddies and I did unfortunately feel that the flavor was lacking. Thai food usually has punchy and complex flavors, and some of the noodles were bland, and the pad thai was honestly one-note. It was more of the sweet, ketchup based pad thai that I sometimes see in the states than the tangy, savory sauce that authentic pad thai has. I will admit that I've been ruined for most pad thai since my visit to Thailand years ago, but this was definitely one of the less satisfying ones I've had in a while.
The spring rolls were decent, but the peanut sauce was oddly watery, very different from peanut sauce I am used to.
The thing that saved all our noodles was the chili sauce you can ask for, which isn't really a chili oil or a hot sauce per se and is more of a condiment made with pickled chilis. It is HOT and tangy and savory and all the things I wished my noodles tasted like, so adding a spoonful of this and mixing it in honestly saved the dish. Definitely ask for the chili sauce if you come here.
