When I visited, a tour group swooped in and the restaurant got to work in impressive fashion. You don't really order here; they'll bring you a set menu depending on how many people are eating. You just have worry about what to drink. They start rolling out the dishes and your table is suddenly full. One plate contains Banh Xeo, a golden crispy crepe filled with savory goodies. Another plate has skewers of grilled sliced pork, sausage, and fried egg rolls. There's a plate stacked high with thin rice paper. Another plate has lettuce and herbs, while another had pickled veggies. Now what are you supposed to do? They'll assemble the first couple for you. You grab two pieces of rice paper, add some lettuce to make a wrap, then you add some pickled cabbage. Throw some meat in there, and roll it all up. Dip it in the savory and spicy peanut sauce and enjoy the crispy and chewy textures. Do the same for the banh xeo. The whole banh xeo crepe also goes in the wrap.
