Banikuman, located in Nagano, offers a dining experience that celebrates one of the region’s specialties: horse meat. I had the horse meat sashimi set. The set features five cuts from different parts of the horse, including the tongue. Each cut had its own unique texture—some were slightly chewy while others were softer—but all were fresh and flavorful. Despite horse meat being lean, it was surprisingly quite tasty.
As an appetizer, I tried the boiled horse intestine. The intestine was tender, and the soup, with its hint of sweetness, was both comforting and delicious.
