Delightful pizza spot in the heart of Idaho Springs' historic district! The space is massive, spanning across what looks like three storefronts, but they absolutely have the customer base / demand to warrant it. We dropped by around 7 PM on a Saturday evening and were 17th on the waitlist (which was about a 20 minute wait, so not bad at all).
The pizza was absolutely worth the wait, which my close friends will tell you is a pretty wild statement for me, a pizza hater (sorry), to say. The mountain pie is a bit thicker than traditional pizza, with significantly more crust and cheese. You can pick from one of their chef-curated options or build your own; we opted to assemble our own with three cheeses (mozzarella, parmesan, and feta), and plant-based pepperoni. The standard dough, which was made from whole wheat and agave, felt much more wholesome than most pizza doughs. It was extremely filling and tasty on its own, but especially delightful when paired with their flavorful tomato sauce and all the cheese. The pizza is quite heavy on its own, but it's nice when balanced out with a nice fresh salad -- their arugula, pine nut, and parmesan salad was the perfect accompaniment.
Our server was also *super* sweet and friendly, and I was impressed by how attentive and welcoming he -- and the rest of the staff -- were. The space was cozy and inviting, and it was all around a delightful time.
