Won't go there anymore. $12 crawfish when the market is $8, and they provided the smallest you can find. We ordered 2lbs and barely got one. Plus, they should have warned us how small the crawfish was. And their tables weren't much bigger! The worst of our visit is they took our orders at closing time then rushed us out, claiming it was an hour when it was just 40 minutes. Their gumbo had little rice, and their dungeons crab was too salty. The only reason we didn't give them one star was due to the flavor of the crawfish being perfect. A small business will probably not make it due to a lack of basic integrity.
Easy fixes:
A) Always warn your customers of the wild prices and sized of a bad market without apologizing. Make sure not to be smiling or sarcastic, Your customers will be more forgiving, and you'll be seen as having integrity. If they stay or leave, you will be the benefactor of more business.
B) When customers feel forced to ask about the amount, tell them the truth and apologize, then rectify it by giving them more than requested. (Make sure your staff conveys questions from customers like that)
C) Do yourself a big favor. If you advertise closed at a specific time, then tell your staff it's when the last customer leaves, period. Never ever kick a customer out and never ever clean and break down around them. If you, the owner/manager, don't fight for the customer experience, who does? Believe me, you are the only one who cares about return customers. Most customers will leave as exponentially as possible without being too uncomfortable about it. For the customers who don't and are narcissis are usually big tippers. Some are not, but they always come back. It's part of doing business.
D) If the order style is upfront and no waiter, then remove the tip question on the kiosk.
You should be able to afford these things with your margins!
Lastly, if you believe in God and pray to Him, all you have to do is learn from your mistakes, and in that process of you trying, He will take care of you and your efforts! Just know, sometimes it's not the way we expect it. But it's always great!
