Among the best restaurants in Madrid we've discovered in 2022 (although it has already been open for several years). Bipolar serves creative dishes with a notable Asian influence, yet firmly grounded in Spanish cuisine. The torreznos are out of this world: slowly cooked and thus really soft inside, but crunchy outside, rounded off perfectly with a touch of lime. We also loved the salmon tartare on a crispy prawn pancake, served with seaweed; it's a tiny bit spicy and just delicious. The only dish that didn't fully convince us was the black rice: the crispy crystal prawns offer a nice textural contrast, but the rice itself lacks flavor. For dessert, the cheesecake is amazing; you can really taste the different types of cheese used, and it goes surprisingly well with the salted-caramel ice cream (a combination I hadn't seen before). If you like sophisticated, yet still affordable, cuisine, Bipolar is a must.
