Bisou.

This was one of my most favorite bar experiences I've ever had. As my bartender said- who is welcome to use the "tu" form with me (who wrote that in a prior review? Bars are for fun!?!)- it was sad to hear it was my last night in Paris and I agree. I would have gone there every night. One thing I noticed in the overall cocktail scene of Paris is that there are a lot of similarities. There are a few places doing something truly different-- but this is so far out of the box, and totally in my wheelhouse. They are a step above all the rest. She suggested drink after drink that hit the mark and I trusted her completely. You name your flavor profiles and let the bartender do their magic. Not to mention they have a staff that clearly are intellectuals about the composition of a drink, are excited to share their knowledge, and are truly enjoying what they do. I am not sure when I will return to Paris, but next time I'm coming to Bisou on day one and looking up my favorite bartender!! I miss her already!

They make your cocktail based on your preferred ingredients. Very friendly and informative staff with great energy. Mostly outdoor street seating. And limited counter seating in the very small space indoors with a pretty aesthetic.

Cool concept, cute small place. Excellent cocktails. They now have this abhorrent habit of suggesting a tip when it's time to pay. They say it's up to you but I strongly dislike the idea and won't be patronizing this establishment any longer because of it. I hate being made to feel like I should tip. We're in France, buddy, not in the USA. Service is already included in the bill... Also, the waiters say " tu" instead of " vous", even when you insist on using the polite way of being addressed. I am not your friend and do not wish to be, I'm a paying customer and I'd like a little respect back when I'm being polite, we didn't used to raise pigs together. This place used to be cool, not any more.

I. Loved. This. Place. The cocktails? Amazing! The people? Beautiful! The music? Excellent. The cocktails are priced very fair (coming from Switzerland of course they are) but since they are quite literally customised to your taste, worth it!

Bartender are friendly, and they are good at making a good cocktails which depends on your preference! Will come back next time when I am in Paris’

Loved the concept of no menu and all drinks are tailored made (all priced at €15). I’ve always been impressed at every drink they’ve made so am definitely a regular visitor

Extraordinary concept with good vibe. My partner and I went there twice, one time for happy hour at 6pm and one late night till 1am. We all enjoyed all cocktails they customized for us. They would ask your expected alcohol base (gin, rum, vodka, whisky), your favorite flavor as well as your taste (fruity, umami, creamy, sweet and sour, etc) and voilaaa they would surprise you with their on-the-spot creativity. I think you all should check out this place in Paris.

The concept is interesting. I tried two cocktails, even though they were within the taste palette I requested, they weren't THAT good. They were just okay, not worth the price or the hype in my experience. The staff is very kind and helpful and I love the ambiance typical of a parisian terrace bar.

Hands down the best cocktail bar in Paris. There is no menu, the server will ask a few questions about your preferences (liquor type, sweet vs floral, etc) and then the bartenders will craft you a drink based on your answers! Such a fun experience and every cocktail we got was sooo good. I don't know how they make such great and unique cocktails, but this was our favorite spot out of the several bars we've been to throughout Paris!

This place is such a vibe! It's a small bar, and it's easy to miss. Coincidentally, I walked past this bar two or three times on a few different days. I did see this bar posted on social media. I'm extremely wary of viral places on social media, as they often don't live up to the hype, but this place was amazing. It's small, intimate, and cute inside, and it has a small section of patio seating. I was slightly apprehensive when I first walked up; one of the staff seemed a little standoffish initially, but I ended up sitting at the bar. The majority of the staff were vibing and having a good time. They seemed to genuinely enjoy working there. I had the pleasure of being served by Alicia (apologies if misspelled); she was very down to earth and sociable, but not sociable in an overwhelming or fake way. She was chill and very talented. The concept of the bar is no menus. You describe the elements and liquors or classic cocktails that you like, and they create custom drinks. Alicia is 100% that girl! Everything she made for all the bar patrons received positive feedback; the woman couldn't make a bad drink if she tried. She used a few ingredients that I don't like, but the drinks were so well-balanced and so delicious that I didn't know until she told me the ingredients. This is my favorite bar in Paris, hands down. I will always come back to this bar. Alicia is the goat, I also heard speaking at a minimum 3 different languages to accommodate various patrons.

Bisou is incredible! There's no menu- you describe what kind of drink you want, and have a uniquely crafted cocktail just for you! It's a small cocktail bar for an intimate setting, but also has an outside seating area. We had awesome service, the bar tenders rock! Such a cute vibe.

It so much fun interacting with the innovative bar tenders who ask you many questions and try to create something special just for you. And at least with my wife's, if you aren't in love with the cocktail they create, they'll replace it at no cost. And the views from upstairs are spectacular.

Let's start with the funky fun pink theme. Adorable! More importantly, the servers are artists. (I asked.) My friend didn't know what she wanted and our waiter asked if she wanted fruity, floral, or savory/salty. We Americans are not used to being offered "floral," and that was exactly what she wanted! Her drink was divine. After serving it, our waiter challenged us to identify the ingredients. We got close. Loads of creativity, and the packed tables are a testament to the great drinks and welcoming atmosphere served here!

A bar with no menu and caters to your preference and palette? Sign me up! My range of cocktails are usually down to 2 styles of drinks so a place like this is a treat to get me to expand my tastes a bit. Bisou's small but very inviting space sets the stage for a great day/evening of drinks to enjoy and let the time just pass. The outside patio seating is also a great place to enjoy cocktails and people-watch but I preferred sitting at the bar to watch the bartenders whip up the cocktails and have great conversation inbetween them making drinks. The bartenders ask what your drink style and preference is and the 3 drinks I received were all fantastic. Spirit-forward with a whisky base...oh so tasty. I don't like sweet drinks and the balance of flavors, as well as the presentation were all top-teir. Bisou is a definite must-visit if cocktails are on your agenda!

I came with my daughter & son in-law. The bartender was so much fun! He definitely knew his stuff! We sat at the bar so we could watch him make them. I'm not much of a drinker but he did concoct a yummy cocktail for me. The next drink was a mocktail. Loved how the bartender decorated the drink. My daughter & her hubby had yummy drinks, too!! This place is like choose your own adventure... but for drinks. You tell the staff what flavor profile, spirit, and vibe your into and voila! A custom curated cocktail that's bespoke to you hits your lips. It's so unique and inventive. Each cocktail is completely different. The bartenders are craftspeople with creativity in every glass. Our table of 4 had 8 different drinks, none of them even closely similar. This place is special, because your drink order is special and they make it come to life.

Omg! This place was such a good find. There is no menu so the bartenders made our drinks based on our flavor profile. The vibe is very chill and hip. Also, the price is just right.

Really great cocktails and a "we have no menu so tell us the type of spirits you enjoy and we'll make you something" system, which I always enjoy. Very friendly bartender as well. Have to take two stars off for the music though. Loud really really cheesy pop. "Single Ladies" into "Sexy Back." Sounded like a bad wedding DJ. The music just does not match the vibe they're gunning for.

Love this concept! One price €14, you tell the bartender what you like in a drink and they make a magical concoction! Truly unique experience! The bartender circles back and asks how you like your drink too. Lovely staff, indoor and outdoor seating, nice decor inside too. An absolute Paris MUST on your next trip. I enjoyed my drinks and loved guessing the recipe at the end.

Highly, highly recommend this bar. They don't have a menu, instead you specify the flavor profiles you like in a cocktail and they make it for a flat price of 12€. You choose alcohol, if you like it sweet/sour/dry, and if you like it herby/fruity/floral. I chose gin, balanced, and herby and my drink was very good. There's also cool hobby shops in the area. Would definitely visit again.

Lovely little floral bar with lively staff and music. They make "personalized" drinks based on the flavors you describe! It's super cute and me and my friends had a good time here. Some of the drinks were WOW and some were ok but overall sooo fun. Drinks €12 each!

This cocktail bar is any cocktail lovers dream. They have no menu because they make you drinks based on your tastes and liquor preference. We sat inside so that we were about to watch the mixologists make the drinks. They really take their time and you can tell they love what they do. All the cocktails are 12 euro. If I'm ever back in Paris this place will be at the top of my list to revisit. The bathroom is super cute and has flamingos all over the walls.

Such an original cocktail bar in Paris ! For €12 the barmen are creating a cocktail for you based on your preferences. You give your favorite alcohol, if you like it sweet or bitter, fruity or lemony... A real surprise for the two cocktails I ordered and €12 is not too expensive for Paris. There is also non alcoholic options for €7. The team is great and friendly! It feels like your chilling at your friends' place ( the place is pretty small and comfy too) It is totally a bar to go for an original and tasty experience in Paris

I came here for the first time on a Friday morning & had a beautiful chai latte. It was dusted with gold powder! I was the only one there, but it was nice. Cute decor & good service. I would love to come back in the evening & try their custom cocktails!

Trendy cocktail bar that's worth the hype! This is a really unique spot. No menu- just tell them what you like (liquor style and sweet/bitter/spicy/etc). I got a gin drink that was more herby but a little sweet and got one of the best gin cocktails I've ever had with pretty gold glitter. The prices aren't bad either. Definitely recommend!

Was a little cold but a great experience, bespoke cocktails were great. Andrea made us feel so welcomed and made us the best drinks. The overall energy of the place is so fun. I found my new spot in paris!

This bar is an amazing vibe! I stopped by here to have a couple of cocktails and had a great time! The awesome part of this bar is that there is no menu! You tell them what you like and they go from there. The music was great, upbeat and was a packed place! Definitely worth checking out with friends or solo.

Perfect place for a drink while in Paris. This is such a fun concept. A friend recommended this bar, where they ask your tastes and create a drink for you. They will ask 1) if you'd like an alcoholic drink, non-alcoholic drink, or beer, 2) floral, herbal, or fruity, and 3) sweet, sour, or balanced. Then they'll make a drink to your taste! I had non-alcoholic, fruity, and balanced and it was perfect. My friend had a cocktail that was fruity and sweet and she enjoyed hers as well. It would be very fun to try a few different drinks with different twists each time and see what they come up with. Great place, excellent service, and great prices too at 12€ a drink for alcoholic cocktails and 8€ for non-alcoholic. Would definitely recommend. Only downside is I wish it were on a slightly more lively street for a more entertaining people watching, but that's far from an issue!

A must-go for cocktail lovers in Paris. The bar is in the Marais, a lively neighborhood with other renowned bars close by. The bar is small -- even with outdoor seating -- but when we came in early on a weekday evening we found two seats at the bar. The way it works is that the bartenders ask you what you like in a drink, and then they build a cocktail based on what you tell them. Our experience was that the beautiful, well-made drinks embodied the spirit of what we had asked for. Once you've tasted the drink, they take the time to explain the ingredients and method. What makes this whole system work is the bartenders' obvious skill and deep knowledge of spirits, and more importantly, their total lack of pretension. They are all about making the experience about what you want, not what you should want or what they know. The drinks are a flat and fair price (12 Euros when we were there over the summer). We walked in intending to order a drink and move on, but instead we stayed for a second round and barely made it to our dinner reservation. We'll be sure to return the next time we are in Paris.

Love this place. The cocktails were excellent. Marcus and the fiesty redhead who never told me her name because we were too busy pretending we hate school other made both of my trips here so much fun. Adding this to my list of Paris spots to return to every summer.

This is the best cocktail bar I have ever been to, hands down. Highly recommend. There is outdoor seating and a small amount of seating inside. Service is top notch and the drinks were unbelievable. No menu--the server asks you a few questions and they make you a custom drink. Husband and I had four drinks total and all were insanely good.

Stayed in Paris for 6 days and was here 4 of those nights. Love it so much!! Everyone is so friendly, the drinks are amazing and the ambiance is so nice. If you're in Paris please give them your money you'll be happy you did.

Late review but this place was a place where you were welcome just like home! The food was delicious! The decor was warm and it was located in the center of Castro near transportation and plenty of bars around to party!

Loved this small bar in Paris! Sustainable hand crafted drinks. No cocktail menu But tell them what you like and enjoy what they bring. If they misfire, which they barely do, ask them to try again. I loved sitting, drinking, and people watching here! It is priced nicely.

Fantastic cocktail bar - if you can find a seat. About 40 seats out front and another dozen inside. Simple concept of 12 for all cocktails and 7 for beers. Cocktails are bartender made to order. All you do is name your liquor and give them some guidance and they'll craft you something delicious. I asked for a vieux carre with a twist and ended up with a harsher version of the drink which definitely got my vibe. Also asked for a Japanese whiskey based without too much sugar and ended up with a lemony whiskey sour that totally worked. Totally French environment with all the outdoor cafe seating, but bartenders spoke English well and the area was full of locals and tourists alike on a late Saturday night. Bisou is one of the best for just a good nightcap cocktail in this area of town.

The concept of this place is really cool in that you tell the bar staff how you like your cocktails and they will whip something up. They have an enclosed outdoor seating area too which is a bonus in the area. Prices are a little on the expensive side but I think it goes with the concept as it is not a set menu of cocktails to choose from.

A friend studying in Paris decided to take me out to this cocktail spot one evening. It's very small, with some outdoor seating, a few spots at the bar, and a single wall of bench seating. Nothing super special looking, but I was intrigued when my friend told me the concept for the spot - no menu, you tell the bartender what you like, what you're in the mood for, and they craft your perfect cocktail. I told the bartender I liked earthly flavors at citrus, and my liquor of choice was gin. A little while later and he came back with a bowl (odd, but okay) containing one of the most delicious cocktails I'd ever had! It was so artfully done, and the flavors were amazing. My friends also received some really delicious drinks, catered to exactly what they liked. One girl thought hers was a little too sour, and the bartender completely remade the drink for her - he said it was important that she love her cocktail. We played a guessing game with each other about what are drinks contained. After we were finished, the bartender came back around to tell us what was in our drinks - mine was beet juice! I couldn't put my finger on while I was drinking, and it certainly wouldn't be my first thought for a cocktail, but it worked so well! This is definitely worth a visit if you're into cocktails and experimenting with new combinations of flavors!

This is a great little cocktail bar. As other reviewers have said, there is no menu-you tell the bartender your preferences and see what they create for you. We had 4 drinks total and all were unique and fit our preferences. The service was friendly and attentive.
