A must try Vlaai (traditional limburg pie, one kf maastricht pastry icon!) the strawberry one is really niceee and big portion! We share 1 for 2 people! The mint tea is also nice! They have dine in place with quite small capacity <3 sooo warm also beside there is a beautiful old mill

Tucked away in the heart of Maastricht, Bisschopsmolen is a charming bakery that combines local tradition with warm hospitality. Known for its freshly baked sourdough bread, pies, and cookies, the bakery stands out for the remarkable freshness of its products. Pies are baked throughout the day, ensuring that each slice tastes as if it just came out of the oven. Next to the bakery, the inviting cafeteria offers a wide selection of pie slices, sandwiches, and beverages. During multiple visits, I had the pleasure of trying both vegan pies and vegan sandwiches, each one consistently delicious and thoughtfully prepared. The staff are not only knowledgeable about their products but also genuinely helpful and accommodating, which enhances the overall experience. Bisschopsmolen is undeniably popular, so expect a lively and bustling atmosphere. Seating can be limited, but the tradition of table sharing adds to the friendly and communal feel. Just ask politely and you’ll likely find a spot. What makes this place even more special is its setting. Adjacent to and behind the cafeteria lies the Wasserrad, a beautifully preserved watermill that underscores the historical charm of the location. It’s well worth taking a moment to explore. Verdict: Bisschopsmolen is more than a bakery. It’s an authentic Maastricht experience. Come for the pies, stay for the atmosphere, and don’t miss the watermill.

Must visit. The coffee, sandwiches, people, atmosphere ... Everything is amazing here. Even the locality is right out of an 80s postcard. But, reserve a table. The place is extremely crowded and everyone wants to eat here.

Their cherry vlaai is the best cherry pie ever! Special Agent Dale Cooper would’ve loved this place.

Visited couple times and i won’t be lying when i said: reserve before coming (if possible) because the place is small yet everyone wants to eat vlaai here. Other pastries also available (broodjeworst, also a favorite from this place). Recommended to pack some pieces home for your loved ones because you haven’t visited maastricht without vlaai from their place.

Yelp
My daughter found out about this place on Instagram. So in my mind, there was a lot of hype going in. It was on our must do list for when we visited Maastricht. But the lines and prices were reasonable and the pies were tasty, but not mind blowing. The molen was not turning while we were there but we did walk about back and see it nonetheless. Then on a tour we visited again and learned the history of it which was cool. If you are visiting Maastricht I would definitely stop by for for a treat and to see the mill.

Yelp
We came across this little shop when going to the old gate. It is next to an old water mill. The mill and the history are interesting. The shop is a little bakery with a bit more. They have great pies and great coffee. We went twice. It's great for a mid morning or mid afternoon break.

Yelp
We were only in Maastricht for a few hours so before we checked out the caves, we stopped in for lunch at De Bisschopsmolen. They're known for their fruit pies and sourdough breads. We dropped in on a Tuesday (around 12:30pm) and it was busy. Seat yourself and try to flag down a waiter to place your order. The menu is small; breakfast (until 11:00am), bread boards, soup, salad, omelet, pizza, toasties and their specialty limburgse vlaai. You need to ask what fruit pie flavours they have for the day (strawberry rhubarb, cherry and apricot were available from what we remember). - Latte macchiato (€2,95) - standard but you could clearly see the layers were separated. - Farmer's omelet (€7,75) - fresh veggies, ham and cheese. This was incredibly small. Omelet was bland and overcooked. Nothing good to say about it. - Bread board (€9,75) - three types of toasties (vegan, chicken and classic). Vegan had hummus, zucchini, carrots, red peppers and green onions. Chicken had a tasty homemade pesto, spinach and green onion. Classic had liver ham and green onions. Our favourite was the classic. - Limburgse vlaai (€2,70) - they had several flavours but we went with the apricot. Thick crust was crunchy, flaky and apricot filling was solid. Get one. Stick with their bread board and fruit pies.

Yelp
Looks like a popular bakery with a grab and go area as well as a sit down area in the back. We sat in the small seating area in the back but you have to get really lucky to get a seat. Luckily we did. The menu is straightforward so don't expect too many choices. They did have a soup of the day which was Split pea soup. We tried it and weren't thrilled. The Croissant with ham was kind of basic as well. Both items tasted like airplane food. We figured out that you come here for the pies. They were all pretty good. We had the rhubarb, berry, and another fruit pie that was lovely. Next time I would come for a coffee/tea and a slice of pie. Don't order anything else you will be disappointed.

Yelp
Not easy to find bakery, restaurant and museum. The latter offers friendly service and very good pizza!

Yelp
Nice place to hang out with friends even though it's a bit hidden. They have various great Limburg pie. Their coffee is great too.

Yelp
Fabulous artisan bakery with coffee shop. Famous for its spelt bread and baked goods - especially fruit pies. Menu also has a nice choice of lunch dishes.

Yelp
A must see for anyone who visits Maastricht, whether it's a day trip or longer. Their pies are fantastic. The crust is out of this world. Slightly bitter in order to counteract sweetness of the filling. Truly the best. The brownies are to die for. Dark, rich, and melt in your mouth. A+.

Yelp
Famous place but overrated I think. The bread is nice but the food is fairly dull. Of course as a tourist you have to go and try it, and its got a great history. I would probably skip lunch and just go for cake.
