"I read that Black Sheep Restaurants, a major Hong Kong hospitality group, published a 17-page “Covid-19 Playbook” described as a "manual on how we are attempting to get on top of the situation, stay ahead of the curve, and come out the other end of it as a team with our values intact." The playbook is offered as a practical resource for restaurateurs — including American chefs such as Dave Chang — and lays out concrete measures: handwashing and sanitizing all surfaces every 30 minutes, deep cleaning every ten days, seating only every other table, and accepting that physical distancing will be part of the "new normal." It also recommends operational steps like helping staff who may not speak the local language, limiting or eliminating travel between restaurants, and requiring all guests to sign a health-declaration form with contact details (and turning away those who decline)." - Chris Crowley
