I'm very frustrated with Blue Manna Bistro, mainly because of the underdelivery of flavor in the food and especially when this place seems to have so much potential. PROS: The staff. Everyone is friendly, kitchen seems very organized and you sense a great vibe among the staff. This eases the guests into the restaurant's vibe so you are prone to have a good experience. Drinks were really good as well. We ordered a cocktail and it was very well balanced. Didn't check the wine catalogue. Open plan kitchen gives the place a different air, but also creates some isues. More on that under CONS. CONS: Flavor. Unfortunately, food was underseasoned. We had a variety of dishes and the common theme was the lack of seasoning. It might have been a bad day in the kitchen but most food items lacked seasoning. This was most apparent in the calamari wok dish and the bread. The bread looks very promising, but lacks salt. The kitchen uses a technique where they either par bake the bread and finish it in the oven a la minute or they just heat it up before serving. We had 2 dishes with the bread. The first bread came out warm on the outside and cold inside. The second bread (which was left longer in the combi oven) had hardened up considerably so the crust felt like old bread. I would suggest the chefs to revisit the bread. Find a good bakery that makes excellent bread and source it from there. It's clearly not the restaurant's forte. There was also an apparent lack of desert items. The only cake available had very weird texture. We were watching the chef making it, he seemed to be in a hurry and he messed up a few orders, including ours. This wasn't his day. Lastly, the open plan kitchen creates a difficulty with kitchen logistics. For example, staff would have to take the trash in front of the customers through the front door. They should have a different layout where trash goes out the back. Price was not cheap.
Overall, an excellent (would have been) restaurant with so much potential. We were critical of the review because we had high expectations going in, the staff was fantastic and prices were high. I hope they fix the issue with the food
