BlueTaco - blue corn becomes blue tortillas At our Blågardsgade location. There are many types of corn, including purple, green, yellow, and black - and, of course, blue. Our organic blue corn has 20% more protein and a lower glycemic index. It is one of the healthiest types of corn, and is naturally gluten-free. The BlueTaco concept is a twist on the Mexican taco, inspired by the rich taco culture of both North and latin America. With bright colors and eye-catching street art, our location captures the feeling of walking down a small Latin American street.
"Blue Taco is an appropriately named blue taco stand, housed in a shipping container at Reffen, often has a line out front consisting of folks willing to wait for its seasonal, gluten-free, blue-corn tortilla tacos. The chef here spent years traveling and working in kitchens throughout Latin America, combining his training with his own culinary point of view. His time in Oaxaca shines through the strongest, with spices, ingredients, and chocolate (for mole) imported directly from that region of Mexico.
