Bootsies

Late January 2026: We have not been at this location since it was the old CocoBolos (What a way to date myself in a town full of college kids!). A group of friends invited us to have dinner at Bootsies. It was fairly crowded being a Saturday evening, but we were seated fairly fast as some of our friends had arrived earlier. I have no clue as to the actual time to get a table in that kind of situation. We were seated in the area that i remember as being a "terrace" that had been separated from the elements by plastic sheeting and warmed by very good heaters, as the temperature outside was well below freezing. Even as crowded as it was, the service was great and the servers were attentive and cordial. I did not bother any of our friends to take a picture of their plates so you will get a summary of just what my wife and i ordered. We started with an Old Cuban and a Good Funk for drinks followed by a Meatball dip for appetizer. The wife ordered a Smash Burger and i had the Sausage and Chicken Risotto. And finally a Gooey Butter Cake for dessert. The portions were adequate and the flavor was great. We can mark this restaurant as one to continue visiting as often as possible.

We stopped here late on a Wednesday night during a random trip through Kansas. I'm not going to lie, I hate parking downtown (anywhere in America), but once we arrived we were pleasantly surprised by the atmosphere and the food smells instantly hit us. The thing that still stands out though was the service. It was amazing, and that's more and more rare these days. It was so good, that we actively were talking about it while we were eating. The server was quick to greet us and just authentically pleasant the entire meal. And it wasn't just her. We had the bartender and two other waitresses visit our table (bringing drinks, food and clearing old dishes away) and everyone was equally as pleasant and kind. That kind of team excellence is just not something you see very often. Seriously, kudos to that staff. Now to the rest. The atmosphere was excellent. Wasn't a large restaurant, so it felt cozy. The lighting was cool and the outside area looked awesome as well. You can see into the kitchen and see the hard working cooks. The food was excellent as well. We actually had the issue of deciding what to get because everything sounded and smelled amazing! We started with the parmesan cheese sticks, which came with two sauces. It's definitely enough for a whole table. I got the Steak Po'zo and honey paprika chips. Never would have thought to put honey on chips, but they were probably my favorite part of the whole meal, and that's saying something. The Po'zo was like a Philly cheese steak sandwich on a crispy pizza crust. It was very good and a healthy portion. My wife got the smash burger with cumin fries and a Old Cuban to drink. The drink was a bit minty, but she enjoyed it. The smash burger came on top of a cheese sauce. The burger was well seasoned and the fries were crispy and flavorful (she also loves cumin seasoning). We also got the gooey cake for dessert, which I thoroughly enjoyed. It was warm and soft. It was sweet, but the grape and blackberry helped to cut through it and made it very enjoyable. I cannot recommend this enough! Although I don't know if I'll ever be back in Manhattan Kansas again, if we do, I know where we'll be stopping!

From Marvin Gaye on the speakers, the funky wallpaper (check out the bathtooms too), to the patio fireplace, this restaurant has a vibe. The food is tasty and eclectic (honey on paprika chips is an outstanding combination I didnt know I needed to try... so stinking good!). The portions are generous. We ended up taking a box home. Our cocktails were delightful. We enjoyed every drop. Our waitress, Taylor, was happy, kind, and helpful. She was patient with our questions.

My daughter and I loved it! This was my first time in Aggieville and what an amazing first meal. We started with some craft cocktails and goat cheese dip and then shared a caprese Po'Zo. The whirlwind of flavors from the food was fun and delicious. They offer a fun friendly atmosphere and are really nice. I'll be back next time I'm in MHK!

Came here for lunch during the week, they were very busy. Service was trying their hardest. I got the fried burrata- a bunch of cheese, delicious seasoning. I got the special sandwich that had cranberry on it. It was a lot of cranberry for the sandwich but it was still a good sandwich. I also tried the mother in law cocktail and enjoyed that also

We had a great experience at bootsie’s! Came for a lunch date—we were served right away and the service was great. I was also impressed with the food. Will definitely go again!

Bootsies was a fantastic destination for eat and drink. Upon entering, the gentleman who appears to be the GM (maybe owner) instantly made us feel welcomed and seated us right away. The atmosphere is original, creative and pops! They clearly put care into the feel of the joint. Our waitress was attentive and kind. Cocktails (Banana Bread Old Fashioned and the Daybed) were top notch (and we are snobs). Further, the GM gentleman batches some of these so they are on tap. To have that quality and on tap, they know what they are doing. Lastly, the Po’Zo sandwiches are phenomenal. They burst with amazing ingredients. In sum, you cannot miss this place if you want a super hip, super tasty place to eat with amazing cocktails!!

This has become my favorite restaurant in Manhattan after just one visit. The staff, the atmosphere and of course the food, are all incredible! The staff was incredibly welcoming and knew the menu inside and out to recommend what we should try. I had the Prime Rib Po'Zo and it was to die for! I have also never had a better amaretto sour anywhere else. I will be back soon! They have plenty of seating. There were a few large groups that came while we were there but none of them were turned away and they were all seated fairly quickly. There is a patio area that is heated during the winter to make it comfortable to sit out there.
