Great name, wonderful owner (I got lucky, and I talk more than a game show host on a quad ristretto) and a solid concept. I suspect the owner has profit expectations that are not aligned with getting my 5*. The broth is weak (add water, less cost) and the prices are extreme. Two 300ml and one 480ml broth plus 2 slices of toast usd$45. That's a steep light lunch for 2. The flavourings are good; really good. But at best, this is a flavoursome drink. It's true that broth is not consomme. It's not designed to carry the full origin flavour alone. But then the price should reflect that. This is a bone intensive product, and that's why these concepts are as uncommon as licorice shops (except in Norway, where both are plentiful). But it's not for us to solve these issues. We're just the crazies that want more for less. He's selling in wholefoods, who screw their suppliers like coal mining kiddies in 19th century Scotland. So I'm guessing there's room to move on either the price or the intensity....
