I was their first customer on a cool Monday morning, and as I approached the coffee bar I noticed that the barista was getting dialed in. That’s when I knew I’d stumbled onto something special.
For those not in the know, “dialing in” is the process of adjusting the grind size of the coffee to achieve the perfect time for your shot of espresso. Too short and the espresso is stringent and underextracted; if it goes too long, it’s overwhelming and loses its brightness. Get it just right and a good barista can bring out the best in a coffee, making it truly sing as it hits all the best notes.
As soon as I realized what he was doing, I knew I had to order an espresso. I’m glad I did, because the flavor profile was excellent. “It’s nice to see a serious coffee shop in town,” I told them.
I wish I could’ve spent all day here. The book shop is cozy and full of all sorts of treasures. As a west coast boy, we don’t get to see many old buildings like this, so the feel and sight and smell of the place was just as intoxicating as the double shot of espresso I was sipping on.
This place is a MUST try if you’re in town, and is one of my favorite coffee shops I’ve ever been to.
