Yes, good things are deserved to be made simple and good. The experience of having a cup of flat white with cow milk was pleasant and delicious.
Most striking is the fact that the barista does single dosing with different beans on the same grinder. That takes time and true dedication.

Every single cup received 100% attention of the barista. He is so meticulous about grinding to pouring the milk - that’s impressive.
There is so much to say. Here are the most noteworthy points:
#1.1 the variety of beans
There were 4-6 beans to choose from. I asked him which bean to choose for a classic flat white with cow milk.
The beans can usually be purchased in the shop themselves.

Yes, he uses a scale, spinograph, leveler, temper and pre-infusion. And a very precise and expensive scale to take the measurements.
#1.3 the cleaning
After every grind and cup he tediously cleans the grinder and the porta filter machine.
#2 the interior
The interior has character. It’s just one room that formerly was a horse stable. The exposed brick stone gives me a warm feeling. The very tide and clean counter were all the coffee magic happens is a little to minimalistic to my taste.
#3 the atmosphere
When we went there on a Wednesday afternoon there was 1 table occupied inside and 1 outside. The barista was easy to chat to and even allowed me to film his espresso brewing. That gave me a warm feeling. The wooden chairs and bench were a little hard to sit on for a longer time though.
