What can be said about Cascades Restaurant, nestled in the iconic Stanley Hotel? I'll be honest, we approached this hotel restaurant with some preconceived notions. Being at the Stanley, how hard does this restaurant really have to try? I won't say what I expected--if I had, I would have been embarrassed instead of floored. All said, I wasn't planning to leave the hotel on my one night there. Whatever Cascades had, I was going to make do.
Well, we were pleasantly surprised, despite the mixed reviews.
The restaurant and its dramatic bar provided a wonderful, cozy backdrop to a cold and snowy night (literally). We could tell there was a mix of established locals and hotel visitors--this was a good sign.
We started off with the Pork Belly and Crawfish Dip, accompanied by a Stanley Old Fashioned. This was the first pleasant surprise of the night. The Pork Belly was perfectly prepared and a generous cut of meat. The sauce was piquant and memorable, a great way to get our appetites going. The Old Fashioned had just the right amount of fussiness. The Crawfish Dip was equally good.
For entrees, we had the Lobster Bisque and Meatloaf. We were already getting full from our appetizers. The Bisque was as I would expect--rich with the right portions of cream and sherry, and just the right amount of sweetness. While it's a bisque, I do prefer a bit more chunks of lobster. Their Meatloaf--a mixture of Elk, Bison, and Wild Boar--was exactly what I was looking for as a visitor to Colorado. It had that light gamey taste I was craving, and the mushroom demi-glace was just right.
Needless to say, we overdid it--because it was delicious and hit all the right notes for us. The service was fine, a slower pace for sure, but this was fine. We were hotel guests and not necessarily in a hurry. After a coffee, we had to walk it off by giving ourselves a tour of the grand hotel.
Yes, we can't ignore the other reviews--but I think what they are saying is that, depending on the night, things can go either way. We hope this doesn't stop anyone from rolling the dice and having the experience we did.
