Cayman Spirits Co. Is Reinventing the Way Rum Is Made - AFAR

"Founded about ten years ago as the Cayman Islands' only distillery, this small-batch craft operation grew from a waterfront shack and five-gallon still into a 5,000-square-foot custom-built facility that emphasizes hands-on distilling rather than automated, high-volume production. Its signature Seven Fathoms Rum is first matured in Louisville bourbon oak casks and then uniquely aged by submerging the barrels at 42 feet (seven fathoms) off the island for up to three years, using ocean movement to agitate the wood and extract sugars—resulting in a seriously smooth amber spirit with earthy, sweet notes of caramel, cinnamon, dark chocolate and a subtle bourbon character. The distillery also produces Governor’s Reserve Rum, Gun Bay Vodka, H.H. Hutchinson’s Liqueurs and an upcoming gin; demand has grown to the point that it requires about 100,000 pounds of sugar annually (some sugarcane is sourced from Grand Cayman’s East End while molasses and raw brown sugar are imported) and now produces roughly a million liters a year. Visitors can enjoy a $15 tour with tastings, and products are available locally at beach bars like Calico Jack’s and through retailers in the Cayman Islands and the United States." - Ashley Mateo

When we first arrived the welcoming was warm. The tour was immersive, engaging, and filled With fascinating insights about the rum making process, from sugarcane to cask. Truly enjoyed the humor from our tour guide, she was charming and funny. They had an assortment of delicious rum and coffee! We had the opportunity to taste the vintage rum along with amazing people we met there. Really appreciated the knowledgeable staff and best of all, we got to meet the coolest master distiller ever!

One of the best distillery tours I have ever been on. Mischa from Croatia the assistant distiller was an awesome host/ guide! He explained all of the flavors and history of there products and lots of history of the island! Best part was lots of tastings! Dark and the coconut were out favorites but not a bad one in the batch. Make your reservation early!!! Wish I gotorr pics but I was to busy tasting!!

We cruised into Grand Cayman for the first time. After taking a taxi tour of the island, a part of our group wanted to stop and try some rum at the Cayman Distillery. We did not have reservations and did not have time to wait for a tour as the ship left relatively early. But for a very small fee, Athena took us on a tasting tour of the rums and spirits that Cayman Spirits produces. Every one of the samples was different and served in an order that allowed us to taste the flavor without merging the nuances. Athena was amazing. She was friendly, conversational, and funny. She made the delicious sampling even better with her candor and personality. We purchased the "build your own sampler" 4 pint box with Coconut Rum, Banana Rum, and 2 of the Dark Rum. The Blackberry liqueur was a favorite, but it did not come in a pint. We decided to walk the path from the distillery to the cruise tender. It is about a mile, but it was an easy trip. While some have said in reviews that the area is "sketchy", we found that it was simply industrial. My wife and I are already planning our trip back to Grand Cayman and will visit again.

Biked here from the Marriott and had an unbelievable time. Misko was a great host. We experienced so many great rums and other drinks and ending up going home with a bottle of what I believe is their flagship. After the tour / tasting, Misko spent se. Time giving us recommendations for around the island. So glad we stopped here!

Probably my favourite excursion on the island. Our guide was so funny he definitely has prospects for a career in standup comedy. Not only is he hilarious, he was super knowledgeable and informative about the history of the island along with sharing details about their special rum making process. Would definitely recommend !

This is the home of Seven Fathoms rum. Visited as part of a ship’s excursion. A very lively and entertaining young lady gave us an introduction to the history of the distillery,and then we all partook in rum tasting. The coconut rum was delicious.

Did a rum tasting tour and it was such a fun experience! Athena led our experience and she was funny, personable, and incredibly knowledgeable. All of the alcohol we tasted was delicious and you can tell this place loves what they do! It was super cool to hear about their involvement on the island, what they produce and bottle for some local favorites. A great way to spend a couple hours!! Highly recommend!
