I've been visiting Barbados for 40 years and this is the best restaurant I have tried here.
Firstly, the ambiance and quality of Champers furnishings is considerably better than what you will find at most of the restaurants on the island. Situated on a low cliff on the South Coast, you are treated to a gorgeous sunset in the Southwest during the winter season.
Secondly, they have a good (but not too lengthy) selection of local and imported food. I think you are better off to have local fish,. vegetables or lobster here (the quality is very good, and Barracuda is safe to eat in Barbados unlike many other Caribbean islands). Shrimp, beef and lamb are more likely to be frozen/imported and so not as high quality as the foregoing.
The service was very attentive and I found the prices (when judged against fine dining standards in the USA) to be good value. It's hard to find a bottle of French wine at a US steakhouse for 35 USD.
Just make sure to make reservations well in advance, especially during the busy season. You can do it directly on their website.
