Calgary Is a Culinary Destination on the Rise

"The newest outpost from chefs Connie DeSousa and John Jackson lands all the details: cheeky wall art, an immaculate curing room for dry-aging prime cuts, and an impressive selection of salumi. DeSousa's Portuguese heritage and Jackson's time learning sausage in Italy surface on the menu with linguiça and whole-pig mortadella alongside tender charred octopus, roasted bone marrow escargot, a handful of fresh pastas, and carefully sourced vegetables, salads, and salty fried snacks." - Jennifer Malloy

We dined at Charcut during the Visa Infinite Dining Series. We had a blast. The dishes were fabulous, the service, stellar and the pairing (tequila, beer, red / white wines, ports) were perfect. Connie, John and their friend chef Henrique went well beyond our expectations. It wasn't just a meal but a celebration of cultures, culinary exchanges and friendship. Thank you Chefs for the amazing night, one to remember.

Disappointed with Charcut's approach to sides. A few roast potatoes and a pinch of arugula at these prices is not value. I should have a choice of carb and a choice of veg at these prices. My steak was also disaapointing. I ordered medium rare 10oz. Honestly, was only 8oz in my mind and over cooked to medium. I imagine because it was smaller than 10oz, the chef's timers for medium rare didnt work leading to overcooked. Disappointing birthday meal despite my server and the atmosphere being sensational. Look at the pic, is that a $60 meal to you? Is that a 10oz steak, cooked medium rare? Comments welcome.

What an amazing experience at Charcut! We've been frequent visitors to the downtown location, and it has never disappointed. This time, we enjoyed a family gathering (kid-free!) and had a fantastic outing. The food was phenomenal, with the charcuterie board stealing the spotlight. The bison meat was absolutely incredible—hands down the best I’ve ever tasted! The service was top-notch, attentive, and friendly 👌🏻👍🏻. We’re already looking forward to our next visit to explore more dishes on the menu!

We celebrated our 8 year anniversary here and it is the best meal I have eaten in a very long time. We had the fried cheese for an appetizer and I will dream about it. The texture was unreal! We then shared the pepperoni pizza and the strip steak and both were a 10. The crust on the pizza was absolute perfection. Would definitely recommend this place to anyone! Especially for a special event.

Had a great dinner with my family here! Their carbonara was great! Al-dente pasta with cheesy cream based sauce and a yolk that adds character and flavour. Their happy hour is great value too, especially if you want to try out their cocktails. We had a pizza, but I wish we could order Connie & John’s pizza for dine-in. The staff said they used the same oven, but the Charcut pizza vs C&J is way different from each other. Their selection of charcuterie meats was the highlight of our night! Parking can be tricky around University district, so plan ahead!

The food was good, but the confusing parking situation left a bad taste especially when I’ve asked my server twice. I was told there wasn’t free parking so it cost me 15$ for 3 hours to park in the lot across the street ( hangTag). After finishing up my dinner, I saw a new parking sign at the entrance with Charcut 3 hour complimentary parking. I was there for a baby shower (a party of 8) and 2 of us paid the 15$ and the rest had to look for street parking. It just adds up especially when there is mandatory tip of 20% on top of our bill for parties of 8 and more. This could have easily been avoided with training and knowledge.

No complaints on their ability to handle a large group of 11. This place is just as good as their downtown location. Their fish is excwptional, handled with a delicacy of the best Chinese steamed fish but with Italian butter and lemon flavors. Would be excellent with rice. My complaint is that the desserts are trying too hard, the "cheesecake" and Italian flan are far too deconstructed leaving the doughnuts the best dessert because of it's conventional nature.

We have two people enjoying a meal together. The pasta and beef are both good and the atmosphere is lovely. The octopus flavor is a bit subtle due to the sauce, but still tasty. The fried pork belly is a bit heavy on the fat and skin, could use more meat. Overall it's not a bad experience.
