We've stayed here 6-7 times over the years and overall (except for the food, see below) it a wonderful place, an unexpected, unique discovery. The staff is friendly and professional, the rooms are spacious and very well appointed and the grounds are beautiful. However, after being away for several years, there were some disappointing notes to our recent stay. 1) This place is expensive, they've now started charging separately for room and meals. While the rooms were great, the meals have taken a downturn. we had a dinner of polenta, greens and lamb chops. The veggies were very good but the lamb was well done, solid gray color. Being the centerpiece of the meal it was a definite downer. Anyone can take something off the grill earlier vs later. The breakfast at CCR have always been great, still the best Huevos Rancheros I've ever had, those you could order along with several other dishes, plus they had some items in buffet dishes. Now it's all buffet and a terrible one at that. We came through about 30 minutes before the close of breakfast and got the dried up, crusty dregs. Several items were entirely gone. At these prices they should risk having food left over by continually refreshing the offerings. The worst was the "french toast" and "hash browns". I was shocked that the french toast were little manufactured rectangles fresh out of the freezer, I tasted one out of curiosity and it was terrible. The hash browns were perfectly formed Sysco rectangles, mealy, no taste. If you want a better breakfast buffet, go to Holiday Inn Express. 2) also, while I can appreciate the up keep required on a property like this, they need to schedule it differently. You go to a place like this for peace and tranquility. My wife and I were reading by the lake at 8am and there was a guy running a leaf blower and a a huge excavator working on the hill behind us!

If you want a peaceful stay away from the city, Cibolo Creek Ranch is your spot. The birds are amazing and the views spectacular. The stars at night are visible as the area is free of light pollution. Enjoy walks, shooting guns and good food!!!

My wife and I spent two very relaxing days at the ranch. We have traveled all over the world and this place is a truly unique one-of-a-kind experience. Everyone on staff was attentive to our needs--check in personnel, wait staff, and activities coordinator. Thank you to everyone in the kitchen who catered to my wife's special dietary needs! Thank you to Lupita and Tony for the warm welcome, Mooney for good conversation and excellent drinks, and Octavio for guiding our activities. There are many others as well that made this such a memorable trip for us, so thank you all! We plan on returning in the not too distant future.

This was the most unexpected, incredible experience. I won’t lie when my husband said we were going here for a vacation I thought he was a bit crazy. But this was the most relaxing, beautiful, rejuvenating vacation I could have imagined. The landscape and hiking are breathtaking. The communal meals are so fun and you meet so many incredible people. The pool is so comfortable. The stargazing is awe inspiring. The food is delicious. You really feel you are in a special place off of any map in an untouched corner of the world.

An absolutely amazing luxury experience in the middle of nowhere surrounded by fascinating history! Gourmet meals, horseback riding, ATV tours, pool and hot tub, ranch tours of the remote historic forts, mini-museums inside several rooms of the restored fort where the lodging rooms also are located, beautifully landscaped courtyard with a natural steam flowing through, bronze sculptures of the old West. After three nights there, we hated to leave! The only slight criticism is that the staff were not warm and welcoming. They were clearly simply only doing a job. But I imagine that it's extremely difficult to recruit top-notch hospitality staff in the middle of nowhere. But don't let this keep you from experiencing the ranch!
