Very accomodating gentlemen at Cuchilleria Colmenero. I purchased most of my knives and other kitchen tools in this shop back when I was in San Sebastián. They often gave me regalos because I was a frequent customer there and not to menton, they give about a 10% discount to those affiliated with certain restaurants - or if you're simply just a cocinero :)

I stopped here (and Gayle waited outside) during our recent visit to Donastia/San Sebastian. There's lots to see in the display window before you even get inside. My specific interest were Spanish folders in the unique Navaja style (with the little lever on the back). Of course, knife prices have a large range, and there were plenty of economical attractive and functional ones. Inside are a variety of different brands, related kitchen stuff, sharpening services, and folks who really know their cutlery. I personally find country-specific knives to be an interesting and fascinating shopping opportunity, of which you'll find here.

Definitely authentic, up-to-date and pretty much comple with the different brands and their lines. Oh, and they also offer sharpening services for your personal knives as well as on the spot engraving :)
