Let me just say that out of our three day stay in nearby Silver Plume we ate at Cooper's... 3 times. It was delicious!
The first night my boyfriend and I were served by Ryan, who was awesome. We ordered a southern mule (which comes in a handmade mule glass that you'll be charged for if you steal it. So, like with literally anywhere else, please do not steal), Taos meatloaf (green chile, sharp cheddar, with hatch chile sauce, grilled broccolini and roasted garlic mashed potatoes) and the Zen burger (caramelized onion, goat cheese, meyer lemon jalapeno preserves, arugula) and finished with creme brulee.
The Taos meatloaf was good and so interesting! The spices were like nothing I've ever had before. Taste was 10/10. The only critique I have of that dish is that I would have liked a slightly bigger portion of mashed potatoes, but that's me being nitpicky.
Now, to the star. The Zen burger. Can I curse in yelp reviews? Holy f*ck you guys. I literally moaned after the first bite. Hands down, literally no competition, the absolute best burger I've ever had. I can't even describe it to you, please just experience it for yourself.
The second time we went was for a very quick lunch where we split the duck poutine (which they were out of the night before, but we knew we had to try because everything else was so tasty) and the green chile dip with homemade chips. Again, absolutely delicious.
The next day we went and each got the Zen burger again, because we were leaving the area and knew it would be our last chance.
Chef of Coopers, if you're reading this, please reach out to me and let me know how you make the lemon jalapeno preserves! Please, please, please.
(Also, they have a stellar bourbon selection. Lots of Buffalo Trace, including Pappy's!)
