If you can eat one meal in Nederland, make it at Crosscut Pizzeria. It's without question the most popular restaurant in town with a good sized dining room, patio and deck overlooking the mountains.
In a mountain town in Colorado, more often than not you'll find "mountain pizza." Not here by a long shot! Crosscut is slinging traditional wood fired pizzas, bordering Neapolitan style for those counting at home. If you're bold enough to sell this style of pizza, odds are it's going to be good. And they have the oven, the technique and the execution to back it up.
The dough is made with Colorado milled flour, using a three day fermentation process. And the best part? Pizzas are prepared and served one at a time. Let that sink in for a moment!
+Margherita alla Vodka // basil, fresh mozzarella, parmesan, olive oil, vodka sauce. What a showstopper of a pie. The creamy vodka sauce paired with that beautifully charred crust was a winner from the second it hit the table. This was my wife's pie and I desperately wanted to eat the entire thing myself.
+Anello di Fuoco // calabrian chili, basil, fresh oregano, mozzarella, tomato sauce. My only gripe with this pie was that it didn't have more heat. It's quite possible the calabrian chili was omitted, which is a shame because it's one of my favorite ingredients ever (I'm a good italian boy!) They were so busy and we were so hungry it didn't matter. The pie was absolutely delicious regardless.
The char, the bubbles, the crust, the simplicity. This is Italian cooking at its finest. Prices are extremely approachable in this day in age. Don't sleep on their great beer and wine list either.
If you're lucky enough to get offered a seat on the deck, DO IT. Slip a waiter an extra $20 if you have to. The view of the mountains and the sound of the rushing creek is unparalleled.
I've heard A LOT about this place over the last few years and it completely lived up to the hype. Crosscut is the place to be in little old Nederland!
