11 Essential Guatemalan Food to Eat in Guatemala - AFAR

"This hands-on cooking school offers the chance to learn pepián, the country’s quintessential stew, by individually roasting red and black chiles, sesame seeds, cilantro, tomatoes, and tomatillos, then blending them into a creamy, complex sauce. Classes focus on the classic version served over rice with warm tortillas, often featuring tender chicken with vegetables like carrots and potatoes, while noting that pork and beef variations are also common." - Maliah West

Highly recommend the cooking class! The staff were very friendly, welcoming, and helpful. I was concerned about being able to do a cooking class with my 1.5 year old son and Dario/staff were helpful in keeping him occupied with toys while we cooked. They even had 2 local women and a small boy the same age available to help with him and play with him! We had so much fun! Transportation was also provided for free which we appreciated!

The cooking class was held in an outdoor kitchen on a 2nd story terrace with amazing views of the mountains. I cooked with David and Suzanne. We cooked traditional Guatemalan dishes including pepian de pollo from scratch. So much fun, good conversation and a delicious meal from fresh ingrediants at the end. Can't wait to get back home and recreate this meal.

Excellent cooking class with amazing views of the nature and towns surrounding Jocotenango. The class was hands on and everyone in the group was able to participate in a meaningful way in the preparation of the meal. Dario, who led our class, was fun and him and the rest of the staff really made the experience memorable. the event included pick up and drop off in Antigua for no extra cost. Worth the price and would absolutely recommend!

Hands down one of the best moments of my adult life. The rooftop kitchen offered sweeping views of the surrounding foothills and coffee farms, and the entire atmosphere was intoxicating from the moment we arrived. We booked a private workshop so my vegan husband and I (gluten-free) could both enjoy every dish. I'm sure they would have easily accommodated our dietary needs in a group class as well, but we wanted the full experience. Setting it up was seamless, including roundtrip shuttle service. Darío was incredible. He's a hilarious storyteller and a deeply knowledgeable cook, and he had us completely enthralled from start to finish. The class was taught in English, but he was generous, patient, and encouraging as we practiced our Spanish along the way, which made it feel even more immersive. We made three traditional Guatemalan dishes: boxboles (masa dumplings wrapped in greens), vegetable pepián (a spiced stew), and rellenitos (sweet plantains filled with refried beans and cacao). We also prepared a radish salad, a fresh salsa, and hand-pressed tortillas. Every part of it was genuinely special! Engaging, generous, and so well done. Our next visit to Antigua will absolutely include another Cuscun cooking class.

This was a great experience. I booked the 10:00 am cooking class. They picked me up right on time in a tuk tuk and took me to class about 5 minutes past the market in town. The translator was fun and helpful and the chef was lovely and knowledgeable. We made three dishes- doblada, Jo on, and Glory of the Bananas for dessert. All of the food was excellent, and the produce was fresh. We ate in the back yard on the patio afterwards and they packed up the left over when we were done.

My wife and I received a cooking class and central market tour with Cuscun Cooking School as a wedding present. Our guide arrived on time at the designated pick-up point, and we drove to Antigua's Municipal Market, where we enjoyed an informative and entertaining tour of the various stalls of fruits and vegetables, meats, and Mayan products. After our tour we returned to Cuscun school's terrace to determine the day's menu and to learn about our ingredients. The other couple and we decided to prepare Subanik, a Mayan ceremonial stew-like dish. Under the close watch of Cuscun's resident chef Dario, we chopped ingredients, roasted vegetables, and used a stone molcajete to grind and liquefy the flavorful peppers used in this slightly spicy dish. We also learned to make rellenitos, mashed platanos formed into balls, filled with a chocolate and black bean paste mixture, and fried. We then gathered at the table to enjoy our creations with fresh fruit, wine and fruit juices. The class was fantastic from start to finish. Everyone visiting Antigua with an interest in food and fun times should enroll in this unique experience.

There was such a fun vibe at the cooking class, and it was a great place to meet people! My one qualm was that we didn’t really understand the recipes that we were cooking at all. We all worked together to cook everything and would be assigned a task - chopping carrots, for example. We never learned how it all came together (you add the carrots and these 8 ingredients to make the pepian). Instead the kitchen staff put it all together. So, I felt like I couldn’t replicate anything at home or even understand what we were eating but as I said, it was still really fun and we met some really nice fellow travelers.
