Debauve & Gallais - Gastro Obscura

"When Sulpice Debauve started selling chocolate in 18th century Paris, he touted the exotic import as medicinal. Debauve was a trained pharmacist, and, not incidentally, a “lumière,” one of Voltaire’s enlightened who saw science as the future. He used the utile dulci (useful sweet) to help the French Queen, Marie-Antoinette, cure her headaches. In the process he revolutionized French chocolate. At the time, cacao was largely consumed as a beverage, one which Marie Antoinette had been drinking since her childhood in Vienna. Debauve mixed drinking chocolate with sweet almond milk and the bitter headache powder he concocted for her, then molded the mixture into disks and allowed it to solidify. The queen named these chocolates Pistoles after their resemblance to the gold coins. Debauve would become the royal pharmacist under King Louis XVI. Even after the revolution, Debauve’s reputation remained intact and Les Pistoles de Marie Antoinette, became a popular treat. In 1800, Debauve opened a chocolate shop on Paris’ Left Bank. His nephew Antoine Gallais joined him in the business. Later clients included Napoleon Bonaparte and Marcel Proust. The Pistoles are still sold here, minus the headache powders. The shop has retained much of its original look over the last couple of centuries. Glass apothecary jars and ceramic canisters are lined up on wood shelves behind the original wood counter. Even the somewhat self-important sales people seem straight out of Molière. The shop continues to sell chocolates based on other historic recipes, including King Charles X’s Fleur de Lys, with caramel ganache, and Croqamandes, dark chocolate-coated caramelized almonds created for Napoleon. As a final flourish, chocolates come in boxes with the royal insignia on them which are wrapped with a royal blue ribbon. Know Before You Go The shop has two locations in Paris, but the original one on 30 Rue des Saints-Pères is a designated historic landmark and the more atmospheric." - karenburshtein, Osage

Beautiful, delicate, and delicious chocolate. They were a little pricey but the flavors of these chocolates were worth it. Packaging is also beautiful. I got two 9 piece custom boxes for €28 a box (one as a gift, one for myself) and so glad I got myself a box because every single one was so good. Fun flavors like yuzu and classic truffle chocolate were all irresistibly delicious. The worker also wrapped and packaged everything with a lot of attention and came out beautiful.

Oldest chocolate shop in Paris. It's pricey but worth it. Marie Antoinette used to get her chocolates from them and you can ask for her favorites. The staff was super friendly and they make for a nice gift or treat for yourself.

Google
Chocolat not bad but you pay only for the Name. the staff is very slow and not very friendly. i bought different chocolates for 300 euros and they didn't even offer to give me something to try as a bonus! is this the company's greed or the staff's inattention?

Walked in on chance whilst visiting Science Po for a conference. Expensive but well worth it. Hands down, might be the makers of the best chocolate I have ever had in my life. Delicate, luxurious and sophisticated chocolates - very classy bonbons. Understandably royal chocolatiers! Highly recommended for special gifts though the shopkeeper was pushy in his salesmanship (which is characteristically very unlike the products offered) - shame.

Be VERY WARY of coming here if you are allergic to nuts. I have a very bad allergy to tree nuts and the people in the store told me there were no nuts in the chocolates after I clarified several times just to be sure. Turns out their chocolates do have some sort of nuts as I had a terrible allergic reaction afterwards which lasted a whole day.

If you have come to Paris, and not tried their chocolates, are you even enjoying Paris?! This place homes the very authentic and most delicious chocolates in a v good variety. (I'd rank Lindt on top though)

Google
Best chocolates in Paris. Lots of history to the beautiful establishment. Debauve & Gallais was founded by Sulpice Debauve in 1800. After his nephew Antoine Gallais joined the company in 1823, the company adopted their current name. In 1819 the company received the royal warrant as purveyors to the French court, and was the official chocolate supplier for Emperor Napoleon and of kings Louis XVIII, Charles X and Louis Philippe.

Yelp
Be VERY WARY if you have any allergies to nuts before coming here. I came here with a friend who has an allergy to tree nuts. We clarified a few times with the workers there to make sure there were no nuts in the chocolates. They confirmed no nuts, but lo and behold he got a terrible allergic reaction immediately after eating one of the chocolates. Not sure if it was cross contamination somewhere or if there were actually nuts in the chocolate. To play it safe, probably avoid this place if you have nut allergies.

Yelp
What is Paris known for besides the Eiffel Tower and Lourve? Why, chocolate of course! I had to make sure that I brought home the most delectable souvenir that I could think of. As a newbie to Paris chocolate shops, I was in awe when first entering the shop. It totally gave me jewelry store, high-end boutique vibes. All of the chocolate goodies were beautifully displayed and exquisitely arranged. Service was very good despite the language barrier. The sales associate was very patient with me when trying to guess what I wanted. I was very happy with my purchase. The chocolates were so divine that they did not last long once arriving back home to the United States. I will be sure to purchase more on my next visit.

Yelp
The store is elegant and classic. It's small, but also holds a dizzying array of chocolates. Plan to spend some time here. Even if you plan to just buy a few bars, you'll probably spend your time waiting because of the attention they pay to each customer. And on the day I visited, each customer had quite a purchase. Plus it's Paris, you're not supposed to be in a hurry here. I came for the chocolate coins. Oh, I picked up a few truffles for myself, too. But according to the chocolatier history, Marie Antoinette would call for her chocolate coins from Debauve et Gallais whenever she had a headache. I thought that the coins would be a nice gift to bring home. The coins are thin and delicate. The dark chocolate is very rich and velvety smooth as it melts in your mouth. The truffles were also dark chocolate but also flavorful with hazelnut and cherry. Cute packaging. Friendly service.

Yelp
They made chocolate for royalty, need I say more? Since chocolate was taken as medicine, it was prescribed and originally they were pharmacists who mixed in ingredients to fortify the health of the royals. Some ingredients in the original confections are still under the domain of pharmacists so when they became chocolatiers, their recipes had to be changed. They also sell tea as a natural complement to chocolate since both are considered health fortifiers and the flavors of certain teas with certain chocolates enhance the enjoyment of both, much as wine and food pairings do the same. There are many trendier and more innovative shops, but I love classics done well, and that is what they do here. The displays are as varied as they are tempting and you can literally spend all day tasting every flavor they make with both your eyes and your palate. My favorite is the "Palet Argent" a ganache covered with 85% dark chocolate :)

Yelp
We visited this chocolate shop while on a chocolate tour. We tried four different chocolates, the 99%, which was obviously incredibly bitter, the 85%- my personal favorite which tasted like a good quality dark chocolate, 75%- a bit sweeter, but would also be good for a dark chocolate lover, and the 65%- fairly sweet. I should mention that all chocolates we sampled were actually "dark chocolate" as they didn't have any milk ingredients. While I really enjoyed these chocolates they weren't as creamy and decadent as some of the others we tried at other chocolate shops. This isn't necessarily a bad thing- they were less "rich." This shop also has a fun bit of history behind it as it was started by Marie Antoinette's pharmacist.

Yelp
Absolutely beautiful chocolate shop. Went here to pick up some gifts to take home and had such a hard time picking out what to take! The shop is amazing, small but perfect. Man behind the counter was super friendly, helpful and spoke some English which was nice. I'd love to return many more times and try all the pieces.

Yelp
I spent an entire day touring chocolate shops throughout Paris and this one was AMAZING. 1) The dark chocolate caramels are life changing (so good!) 2) The staff was friendly and helpful and allowed sampling 3) the store is lovely. D et G for the win!

Yelp
