I have waited a bit to write a review. When you have a new restaurant with new ideas, personally created crust and topping combinations, a new building and of course a whole batch of new staff. Were there some bugs to work out at the beginning? Of course, that's to be expected with a new restaurant with their own menu that is built from scratch. I have now eaten here seven times and eaten everything except the Bitteroot. (Vegetarian pizzas just aren't my thing)
They use a Kamut crust with light salt so for those who are expecting a salt laden crust you won't find that here, theirs just has a lighter taste. The red pizza sauce they use tastes very traditional with a heavy tomato flavor. Again lighter on salt, The white sauce has a mild Alfredo taste so as to not overpower the topping choices. The menu is simple and well laid out with accurate representative pictures of the actual food you'll be getting. The prices are just below the pictures with one price for small and another for large. The pizzas are cooked in a chain belt oven and are cooked for the same amount of time every time. The only way to get an undercooked pizza here is to request extra sauce or more toppings than the heat and time in the oven is designed for. So my reccomendation is: stick with 4 toppings or less if you're going to create your own. If you go heavier, it just doesn't have enough time to cook. I have yet to get an undercooked pizza.
The service the first few times took a little longer than I would have liked but now that some of the staff is getting settled in the wait times are typical for a sit down pizza joint. They ask that you bus your own dishes off to the side then they wipe the tables down pretty fast to turn the tables around quickly for new guests. Was it hot the first few visits? Yes. Was that out of their control? Yes. That's stuff that has to be sorted out with the landlord. And it's being handled.
So to sum up, fantastic food, great place to gather with a group or a family as they have some rather large tables and good people running the place.
