Stopped into Dirty Bones in Dallas and had a great experience with Cooper at the bar. He was attentive, welcoming, and clearly cares about the guest experience.
What killed the vibe was his manager, Brian. One of my drinks had visible residue on the rim, and Cooper handled it exactly how you’d want. He apologized and poured me a new one. The bottle was low, so it wasn’t a full pour. I told him not to worry and to just top it off when he had a second.
Later, when I reminded him in front of Brian, Brian cut in and asked, “Do you have a running tab?” It came off like he was accusing Cooper of giving away drinks. I had already paid, and this was just a top-off on a drink that should have been full in the first place. Instead of backing up his bartender for fixing a small issue, Brian created an awkward and unnecessary moment.
To avoid making it worse, I opened a new tab and paid again so there was no question Cooper did everything by the book. That should not be the kind of pressure someone is put under for doing the right thing.
Cooper was great. Brian’s tone and behavior made it clear he cares more about control than customer service or supporting his team. I’m going to leave one star not because of Cooper, but because of Brian and because I think one star will get more attention to this post.
