We had a long layover in Brasilia Airport, so we decided to take advantage and have dinner. We were looking for a restaurant that participated in the Associação dos Restaurantes da Boa Lembrança (I collect their plates) and Dom Francisco was the only one we contacted that actually had the plate available. How lucky for us!!!
The food was absolutely superb! I had the bacalhau, which was served with a shredded potato rosti and a mild sauce and my wife had the wild boar(!), which was served with grilled polenta. The boar was literally falling off the bone; the polenta was crunchy outside and creamy inside, accompanied by a demi-glace that was as delicious as the boar. The cod was lovely, golden, tender and flaky. We finished it all off with a wonderful crème brûlée, done tableside. The restaurant also has a very impressive wine menu, with many outstanding wines from around the world.
Service, unsurprisingly, was also excellent.
