How Australia's Tourism Industry Is Recovering a Year After the Devastating Bushfires

"In the Hunter Valley wine region north of Sydney, where up to 80% of the grape crop was assessed as smoke-affected, respite for some growers came from Archie Rose Distilling Co., which agreed to buy around 50 tons of tainted grapes and turn it into spirits, including a Shiraz beverage, which sold out in a day, and a smoky brandy. "Hearing the stories of people putting their heart and soul into their grapes and not being able to use them was heartbreaking, so we wanted to do something support them," says master distiller Dave Withers. "The brandy will be ready in a few years, so we're looking forward to that and again being able to tell the story of the growers behind it." - Travel + Leisure Editors

I had a fantastic dining experience at Earp Distilling Co., dining alone and enjoying every moment of it. The atmosphere of the venue is welcoming, elegant, and perfectly suited for a relaxing evening. For my meal, I started with the Lamb Skewers seasoned with garlic, chilli, and oregano served with fresh rocket. The lamb was cooked perfectly, juicy and tender with a delightful hint of spice from the chilli, complemented beautifully by the peppery rocket. Next, I enjoyed the Spatchcock with Vanilla Carrot Puree, Broccolini, and Master Stock—a house favourite and understandably so. The vanilla carrot puree was particularly outstanding—smooth, rich, and bursting with flavour. It paired excellently with the crispy-skinned, succulent spatchcock and fresh broccolini. Throughout the evening, the service was great, attentive, warm, and genuinely friendly. To accompany my dinner, I opted for sparkling mineral water, although the gin menu and cocktails looked amazing. Overall, Earp delivered a great experience, and I highly recommend it to anyone.

We had an amazing time at Earp Distillery during our visit to Newcastle! As visitors from out of town, we were after something a bit different – and this experience absolutely delivered. The gin-making session was a real highlight. Ness was fantastic – knowledgeable, passionate, and made the whole process fun, interactive, and genuinely memorable. Getting to take home our custom bottle (and the option to reorder our own unique recipe later) was such a great touch. The venue itself is beautiful – full of character, with stunning art and a warm, welcoming vibe that felt special without being too formal. It’s the kind of place you want to stay and enjoy. The entire team was incredibly friendly and made us feel right at home from the moment we arrived, which really added to the relaxed, enjoyable atmosphere. The food was also lovely – so delicious, and a perfect complement to the overall experience. We’d highly recommend Earp Distillery to anyone visiting Newcastle – whether you’re into craft gin, great food, or just looking for something unique to do. We’ll definitely be back next time we’re in town!

I visited Earp for a banquet dinner with another 10 work colleagues. We had the $79pp banquet and each had around three drinks. The distillery and restaurant looks incredible. Inside it's very funky and stylish, with a super slick and fancy feel to it. Perfect for a classy work function or Romanic date. The banquet was well priced for what we got - which was an exciting array of tasty plates, topped off with some of the best steak and Barramundi you'll ever have. We were all stuffed and unable to finish it, so they kindly gave us takeaway containers. The food was all fresh and tasty. Meat was cooked just the way I like it - medium. Portions were spot on and they staggered the dishes wisely. The drinks were amazing - which they had to be, it being a distillery. Every drink had a fun and unique twist to it and they weren't crazy over priced. Totally recommend trying their whiskey - smooth as. Overall we had a great dinner and really appreciated the fantastic service from the polite staff.

I'm so disappointed with this experience. We have eaten here before and did the gin-making course a few years ago and both were excellent. However, we had a booking for our work Xmas party this year and although we had a relatively small group (30 people) Earps said as we long as we were happy to share the space it would be fine. Our manager rang to check the booking and it had been booked out from under us. We were not informed, and it put us in a very difficult position trying to find a venue as they book up very quickly. My advice? If you book a function keep a record or when you booked, who you spoke with, how much you paid for the deposit and keep checking you're still booked in. We were lucky we checked we still had the booking!!! Beware

To Cat and all the Team at Earp Distilling Co. Thank you so much for your amazing service. From the very start when we reached out planning to bring our group to the distillery all the way to the end the communication was so professional . Everyone in the group had so much fun distilling their own spirit. We would highly recommend this as a great group activity.

My husband and I were at Earp today for lunch and a blending class. The waitress we had Georgie was amazing, so friendly, so helpful, so informative. The food was divine and such a good selection for gluten and dairy free. The blending class was so much fun, we both had a really good time. An example of an up and coming Newcastle business that will go far. Thank you for the great experience

A cute distillery with many interesting class options. We did the spirit blending class and found it so informative and interesting. We got to create our own flavoured spirit and loved the experience. The value for money was really good and all the staff were lovely. The drinks we ordered from the bar were also delicious.
