We stopped by Eggs for a super late lunch and ordered two carbonaras — the Classic and the 1954. Both were rich, creamy, and deeply satisfying. The Classic had a smokier flavor with thicker, perfectly al dente noodles served in a jar, while the 1954 came with spaghetti, which I personally preferred. One of the best carbonaras I’ve had — flavorful, indulgent, and perfectly balanced when paired with a glass of white wine.
I can understand why some might say it’s salty, but to me that’s exactly how it should be. Beyond the pasta, the menu is full of creative, egg-forward dishes that look tempting. Wish we had more room to try them all!
Great spot if you love pasta done right and want something a little different.
