How Chef Maria Grubb Bounced Back After Hurricane Maria

"Opened five years ago by Maria Grubb and her brother as an upscale restaurant in San Juan, Puerto Rico, Gallo Negro was meant to showcase the modern cuisine Grubb learned working in New York. Before Hurricane Maria it was known for goat, rabbit, and fish dishes and drew young Puerto Ricans and tourists; after the storm the restaurant was a disaster — farms were destroyed, staff left the island, mold and grease covered everything, and Grubb had to repaint and redo roofs — yet she managed to reopen using a small generator to power a few light bulbs and a weak fan while she cooked without a hood or AC, sweating in the kitchen. With local suppliers decimated she shifted to comfort food sourced from Costco — offering Bolognese, “Greek nachos” made with pita topped with Feta, olives, and red onions, chicken Parmesan, and a Brussels‑sprouts Caesar — and, despite being closed for repairs for two weeks, she has been promoting Gallo Negro in New York by teaching classes on sofrito and empanadas, hosting Puerto Rico–inspired dinners at the Brooklyn Kitchen, packing produce from the Union Square Greenmarket for a Long Island pop-up, and serving dishes like a chilled cantaloupe and salmon‑roe soup that left guests eager to return to Puerto Rico." - Elazar Sontag, Elazar Sontag

The food was amazing. I got the avocado salad and the flan for dessert. It's a really nice place, the bar is separated, which is nice. The service was not good. I had to keep asking for water. The cups are too small it was a little busy, so i understood, but i had to keep reminding her. asked about the special for the day she didn't know what it was, but its on the menu she said they hadn't told her and never even went to ask.

Amazing Mexican cuisine and drinks! You must try the mole — a rich, traditional dish originally from Oaxaca, Mexico. The chef is also from Oaxaca, bringing authentic flavor to every bite. You MUST TRY!! El Gallo Negro is a total gem. First time in and truly knocked me out my socks. The food was delicious- so rich in flavor and the jamaica agua fresca was so refreshing and not too sweet. You can tell they care about the quality of their dishes. The staff were friendly and accommodating. The restaurant is clean, well decorated, and offers several dining spaces for people to enjoy. I would come here more if I lived closer.

Karen R. was excellent. Drive thru communication can be difficult due to lack of hearing or not the greatest service, but Karen was very easy to talk to. First drive thru where someone was happy and made me laugh. She has an uplifting spirit. Thanks to her I will be a regular customer.

My experience here wasn’t the best. The customer service was great, but the food didn’t taste very good and the portions were quite small. I’d recommend this place only for a quick lunch break, but not as a spot to bring family or friends for a full meal.

You can choose to sit inside or outside. The service was really good. The salsa is really tasty. It’s on the garlicky side and has some kick to it. The basil lemonade is sure pretty and includes an orchid. We ordered the Gallo Negro, which is HUGE! They bring it on a baking sheet. We are vegetarian and unfortunately we didn’t understand that three types of meet are included, even though they aren’t listed in the description in the menu. But the staff was accommodating, which we were grateful for. We don’t live in the area, but if we pass through again, we would definitely eat here again.
