The food in Coban is different from other regions in Guatemala. Definitely different from in the Capital
I started with a gourd of Cacao. Cocoa to us but with soft chewy chunks of cacao in it. Thinner than what we are used to, made with boiling hot water, sweet and Delicious. Made from the cacao bean, not powder.
With the cacao they serv a flavorful sauce called Teu that you put on or dip with tortillas.
