"Mexican-Style Corn on the Cob On a walk through Oaxaca 's Centro Historico any evening, you'll come across carts selling steaming corn. Order an elote and you'll get the corn on the cob on a wooden stick. If you request it "con todo," the vendor will squeeze some lime juice on it, slather it with mayonnaise, and add crumbled cheese and chile powder. If you prefer your corn in a cup, ask for an "esquite" and you'll be served a cup of corn with the broth it was cooked in, and the garnishings will be added on top for you to mix in. Any way you like it, this makes a great snack to eat while you're enjoying the street scene."

son muy ricos, lo unico malo es que no tienen ninguna higiene, cuando se instalan para vender, no limpian nada, y aunque sea entre basura o desechos empiezan a vender, si no le tienes miedo a la tifoidea, son muy recomendables!

The best "elotes" (corn on a cob) and "esquites" (a kind of maize soup) in town! Really, I have tried quite a few and these are really the best, I know you might think "how difficult is it to boil some maize" well it is an art! What makes these elotes and esquites so delicious is especially the home made mayonnaise, grated cheese and chilli powder. Of course also the love it has been made with. There is another "elotes y esquites" lady on the other side of the park (av. Benito Juárez) but they are truly not as good as the one on Pino Suarez.

I am a big fan of this place, I am seriously considering going there right now but I guess it's too late, so it will have to wait until tomorrow. You ever wondered why almost always there's a line up? One of her secrets, which she told my mom, is she adds chile de arbol & other spices to the water where she boils the corn. Considering all the people who come to buy from this lady, she's fast, I've never had to wait for more than 15 min, even when it's really busy, and it's always the same excellent quality. Another secret? Other places just add mayo (which I don't like) & cheese on the top, well she adds some at the bottom, so you have both in every single bite.
