Where to Taste Ajiaco in Bogotá

"Located in a colonial house in downtown Bogotá, this hands-on cooking school runs small ajiaco classes in which the director, Jack Díaz, and instructor Mariana guide about a dozen students through slicing, dicing and simmering to recreate the traditional Bogotá ajiaco santafereño. The instructors stress thinly slicing potatoes and use the three classic Colombian varieties—small yellow criollas, purple-skinned sabaneras and large white pastusas—which mostly break down in the broth to create a thick, creamy texture. The recipe taught includes shredded precooked chicken breast, big-kernel corn, cilantro, salt and pepper, finished with the distinctive earthy guasca herb; students also learn the customary garnishes (sliced avocado, capers and cream) and contemporary variations like adding white rice. The school’s class combines technique, history and tasting, and its ajiaco won first place in the traditional category in 2016." - Veronica Stoddart

Beautiful environment and atmosphere, delicious food and lovely staff. We shared 3 typical dishes and they were so tasty. The staff were so kind and helpful, even though it was very busy for them. We didn’t book, just turned up and did not have to wait for long to get a table. Very relaxing, highly recommend!

Lovely building renovation. Food needs more work, I've been many times and it's very unreliable: sometimes is decent, sometimes is good, and sometimes even the same dish is impossible to eat. They have few vegetarian options. The bakery is much better, pastries are good and coffee too. If you like to support a social initiative, this is a great choice. If you're looking for good cuisine, walk a few blocks away.

Tasty for breakfast, particularly their tamales. Great for tourists wanting authentic food. ☕️ Seating inside is very plain and dark, would be nice if they made better use of the windows and put up some decorations!

Excellent rapport qualité/prix. Le repas est très copieux et délicieux. Le service est un peu expéditif et imprécis, sans trop d’information sur le menu, mais il faut être indulgent car ce sont des étudiants de l’école qui assurent celui ci.

LO QUITARON Ya no está en la calle 9 # 8 - 71... Lo han pasado al segundo piso de la escuela taller con dos TV enormes con novelas caracol a todo volumen terrible... Podrian utilizar esas pantallas como vitrinas artesanales o promocion de las actividades de casa taller. Hay moscas, el aseo de mesas y vasos regular.. Lo utensilios de aseo tirados por ahi... muy lindo el lugar y muy amable el personal.. Pero en cuanto al restaurante una laaástima... dicen q es por cambio de asministración.... Ojalaá se recuperen...
