"Opened in time for the 2000 Sydney Olympics, the Establishment is a pioneering 31-room boutique hotel housed in an 1890s steel plant near the modern-day stock exchange building downtown. Managed by the hospitality group Merivale—which started as a fashion house specializing in fascinator hats and mini skirts—the hotel is popular among brand executives who book the 328-square-foot Loft Penthouse for product launches and photo shoots. Rooms feature wood furnishings, swinging metal doors, animal hides, and suedelike daybeds as well as such amenities as Apple TV, Bose surround sound, and Lululemon yoga mats. Bathrooms are particularly luxurious here, with marble floors, freestanding tubs, Bulgari products, and tall windows that open up to Sydney’s bustling business district. "How did it strike you on arrival? In the heart of Sydney’s CBD (Central Business District), stylish, contemporary Establishment Hotel occupies a former warehouse, accessed via an alluring side door. The softly lit, flower-scented lobby lounge creates an instant sense of sanctuary. Nice. What’s the crowd like? Don’t expect shy and retiring types. Establishment attracts city slickers, lovers of good times, and fans of fine food and drink, given owner Merivale’s impressive roster of bars and restaurants, including seven venues at this epicurean one-stop-shop. The good stuff: Tell us about your room. This intimate hotel has only 31 elegant modern rooms, including two penthouses, with tactile finishes, sophisticated palettes, and luxurious comforts. We’re craving some deep, restorative sleep. They got us? Enjoy generous queen-sized beds in 35-square-meter Studio Rooms or 50-square-meter Establishment Rooms. On the top-floor, the 100-square-meter, split-level Penthouses feature kingsize beds under exposed beams. How about the little things, like mini bar, or shower goodies. Whilst the rooms are large and comfy, and staff were great, the location next to the very large bar means the noise is very loud and runs late. Our stay was Friday through to Tuesday. Friday and Saturday nights the bar noise went through to 3am. A wedding with live band went late on the Sunday. The room had little to no noise insulation resulting in very little sleep. Monday was much better. So the hotel would be a good weekday stay but if you are a light sleeper the weekend may cause you issues

I thoroughly enjoyed my stay at this gorgeous hotel. The food was exceptional and consistently impressive across both dinner and breakfast. Dinner from Mr. Wong via room service was a standout—absolutely delicious. The staff were warm, professional, and consistently attentive. A special thank you to Jazz and Carlos, whose service stood out. Their recommendations were spot-on, and their attention to detail made for a great stay. I’d highly recommend staying here and will definitely be back.

Lovely hotel, great staff . Really convenient, good facilities and connections to bars and restaurants. It’s very noisy though and walls are particularly thin which was not helped by the noise from the neighbouring room. Ear plugs are provided and are needed

The place looks lovely but the rooms are completely not noise proof. We heard the literal conversations of people next door even though they were not loud. It was so extremely uncomfortable esp when it got intimate. What is the point of having a room and privacy if you can hear everything going on around you? We slept extremely poorly because of it and I cant even be angry at the people next room because they were just having normal conversations. We had ear plugs on - eventually having white noise helped us fall asleep. So it all looks good and amazing in theory but practically very bad night of sleep. This is also a design choice of the hotel, which makes me more angry. Really unfortunate as you pay loads of money for a place to sleep and you cant properly sleep. Next day we told the staff, and they said that they could have helped move us to a different room or told the other guests to stay quite. The other guests were not loud, the noise insulation was not there at all and we will not move at 1am. When you design a hotel, a basic requirement is good noise isolation. If you want to have a good night of sleep and privacy, go somewhere else. My sister had a different room and had exactly the same thing with noise isolation - luckily her neighbors were asleep by 11..

I've stayed at Establishment Hotel many times over the past few years and still continue to consider it the only Sydney hotel I want to stay with. Superb service from staff, immaculate and stylish rooms, and access to fantastic food from nearby restaurants including Mr Wongs. And of course a short walk to Circular Quay. Love this place and will stay there many more times again in the future.

My room (34) was large and felt executive. Unfortunately the room faced an alleyway, I was woken up several times during the night from excessive noise outside. The block out blinds don't block out the light either. Let's just say that I now understand why they provide earplugs in the room.

Unfortunately photos don't match IRL and overall feeling of unprofessionalism. From arrival to our (early) departure, the lack of professionalism and care left us questioning the hotel's ability to deliver a quality experience. Amenities and dining sadly followed suit

I LOVE THE HOTEL. When we checked in Sam helped us and she was amazing so friendly and helpful couldn't have asked for better. She literally went above and beyond. Since check in everyone in the lobby has also been really friendly and nice but none as personable as Sam. She made us feel like she was our personal concierge. The room is amazing!! I want to live there. The decor is very stylish and high end. The room is large and lots of tech features. You can control most everything in the room from the phone by the bed. There's an iPad with hotel info and Netflix you can air play to an Apple TV. We had a bit of trouble with the wifi dropping out every so often which was a bit annoying but whatever. Our room had a really nice bathtub that seperated the bathroom from the rest of the room so you can sit in the tub drink champagne and watch Netflix!! I dropped a star because we did not have a lot of luck with the restaurants. As a guest in the hotel they encourage you to eat in their restaurants by offering a bit of vip perks. The first we tried was Establisment bar. We stopped in for a light afternoon snack and some champagne. When you order food you have to pick it up yourself and the prices don't support this type of service. A burger was $20. The bartenders didn't really seem like they wanted to serve us either. We weren't dressed in suits like the rest of the clientele, we felt a bit profiled. We actually felt the profiling happened a lot but weirdly it was mostly by female servers, almost if they thought it was part of their job description to be catty. I strongly believe that women should stick together and be supportive of one another, so this behavior was a bit disappointing. After we finished we left and went to Palmer & Co, their food menu was better and we wished we had eaten there instead but their drinks were super expensive (I guess that's Sydney for you, $20 a drink). The service we received at Palmer & Co was much better. The following morning we had breakfast in the Garden which was good and our server was ok but she wasn't very friendly. Our next Establishment restaurant experience was at Tank Stream Bar and the woman who served us was super unfriendly. She even charged my partner for his wine separately and then turned to me and said "So, how are you going to pay" in a tone that was almost like she didn't think I could pay. I don't even know what that was about. Finally our last restaurant experience was at Mr. Wong's from the moment we walked in the hostess treated us kind shitty. She was going to seat us at this really horrible table in a hall way. I asked if we could have a better table and she said we could wait at the bar for a better table. I told her we had a reservation and we shouldn't have to wait. She then asked if we were guest of the hotel and since we were sat us at an extremely better table. I felt a bit profiled here too. The wine server was also not very friendly although we could hear her chat it up and be super friendly to tables around us, coincidentally she barely came by to refill our wine. On the other hand our sever (who was male) so nice and helpful. He gave us plenty of recommendations and even did his best to make special accommodations for us. In spite of this the food at Mr. Wong's was amazing and surprisingly authentic. TL;DR Stay at this hotel!! You won't regret it. It's the #1 hotel in Sydney for a reason. Don't eat at the restaurants their a bit overrated.

Customer service and compassion is absolutely appalling! I had planned a business trip to Sydney for the week of Aug 28th, but Hurricane Harvey had other plans. The moment both airports in Houston were closed and all flights cancelled I immediately cancelled my "refundable" reservation with this hotel. This turned out to be 36hrs and 55min prior to my check-in time, which is less than the required 48hr cancellation window. This establishment decided to charge me a deposit fee, even though I had no options due to a natural disaster. Not a very caring or compassionate hotel and will not get my business again.

Fab hotel. Super swanky and rooms are huge but priced accordingly. Great if you don't want to queue for the attached bars to the hotel. And very handy to popular restaurants like Mr Wongs. If you don't mind splashing out the cash go for it.

My job requires me to travel a lot to various parts of the world and as a result I have to spend a lot of time in hotels. I have stayed in numerous hotels but out of all those I found Establishment Hotel in Sydney to be the most stylish and trendy hotel I have ever seen. Frequent stays in hotels become boring after a while because they all look and feel almost the same but this hotel was a welcome change because it is different in very pleasant way. The unique design and décor of the hotel provide it a great ambience. I really enjoyed my stay here.
