I owned and operated 5 restaurants in Denver for 20+ years. I say this only to qualify my remarks. We also travel since selling our restaurants and truly appreciate great meals. This was one. My expectations are always appropriate for the venue, I still love a great greasy burger in a dive bar but have different expectations in different situations. Seldom I would say we experience a place that executes in ambience, service and culinary experience. Feast did tonight. The service was perfect, unobtrusive and attentive and what we wanted for a dinner with another couple. The design was nice, done in taste and unique enough to leave an impression. The atmosphere was lively and energetic without being loud and distracting. Our server was informed in both food, preparation and had good knowledge of wines and beverages. She made appropriate suggestions and read us well.
The food really stole the show. Each course was presented with good timing, attractively with perfect seasoning. The ceviche was fresh, perfect amount of citrus, heat and seafood, scallop and shrimp tonight. Oysters fresh shucked well with no shell, grit etc. and although not needed had great house made accoutrements. Cioppino was excellent. A modernized version with a light tomato broth, a little heat and great depth. Pan seared diver scallops were seared perfect, brown butter again perfect, every thing on the plate was intentional, flavored well and artful.
The desserts were truly a great ending to a fantastic night. Flourless torte was nice, again served artful and each component to the plate had purpose. The carrot and parsnip cake was really a show stopper, unbelievable in taste, texture and sophisticated. The candied carrots had a touch of lemon under the sugar glaze and will be often duplicated in my own kitchen.
I seldom write an entire review however we wanted to point out success and thank them for a memorable meal. By far the best meal we have had in Bozeman and one of the best in sometime. I empathize on just how difficult to deliver in all areas of a dining experience and look forward to our next visit to Bozeman. Sometimes but rarely am I surprised to find a true culinary delight. Feast is one.
