New York City has awesome, cool speakeasy bars (see: Milk & Honey, the Shakespeare, Existing Conditions) but Europe just does it better. Foxtrot is an example of the speakeasy bar made way, way, cooler.
I had some time to kill before dinner and Foxtrot was close to where I was eating. I didn't have to ring the doorbell, as one of the bartenders held the door open for me as he was walking in.
Foxtrot is chill. It's dimly lit, the music is at the perfect level and the bartenders are friendly and seem like they were probably plucked from Williamsburg, Brooklyn (red checkered shirts and man buns abound). I sat at the bar watching drinks made.
The drinks here are truly a craft and the bartender was clearly passionate about what he was making. I had the Museu Geologico (14 Euros). I'm not sure what it has to do with earth science but it was delicious!! It was made with mezcal, cardamom, and a few other ingredients that I don't remember off the top of my head. What truly impressed me was the garnish. The garnish was a blow torched marshmallow placed in rolled up dried seaweed. Incredible.
The bar snacks are pretty awesome too- salty buttery popcorn, goldfish type crackers, and nuts. There's actual food on the menu, which I'm sure is delicious, if their bar snacks were any indication.
I wish I got to stay longer and tried a few other drinks.
I'd come back in a heartbeat.
