Celebrity chef Rick Bayless is a wizard when it comes to contemporary Mexican cuisine. I have thoroughly enjoyed using his recipes for my own cooking. I stumbled across them last summer when I wanted to find a delicious hot sauce recipe for my homegrown spicy peppers. Through my search, I found chef Bayless's famous habanero hot sauce recipe on YouTube, which I was able to adapt using my peppers. His sauce recipe is pure magic, but I never thought I'd have the chance to try his sauce at one of his restaurants until recently when I was sent to a conference at Disney's Coronado Springs. While making plans for my trip, I discovered that Disney Springs has chef Bayless's Frontera Cocina. Upon this discovery, my friend and I knew we had to have dinner here, so we made reservations on the My Disney Experience app. The atmosphere was comfortable with artful Mexican decor on display. Our waiter knew the menu inside out and made superb suggestions. My friend and I started out by ordering the sour and refreshing La Paloma, which features Lalo Blanco tequila, Fever-Tree Pink Grapefruit Sparkling Soda, fresh lime, and a Tajin chile-lime powder rim. For appetizers, we ordered the guacamole and Queso Fundido. The guacamole was some of the best we ever had and the Queso Fundido was to die for. Our waiter recommended the Cochinita Pibil, chef Bayless's Top Chef Masters winning taco dish, for our main course. This turned out to be the best recommendation of the evening. The dish consists of achiote-marinated and slow-roasted tender pork, black beans, poblano rajas, pickled red onions, and the famous habanero salsa I mentioned earlier. It was all perfection on their homemade tortillas. And yes, I was ecstatic that it came with chef Bayless's habanero sauce, which was spicy, delicious, and a dream come true. Our waiter said that on a scale of 1 to 10 for heat, it was a 20, but I love ultra-spicy food, so I was in my zone. If I have any critique of the restaurant, it's that the prices are a little high, but nothing that should deter people from eating here. And so, the only thing to conclude with is that Walt Disney World vacationers, who like Mexican food, should do themselves a favor and try Frontera Cocina.
