Jean-Georges Vongerichten’s The Fulton Opens Soon at Pier 17

"Perched on Pier 17 in the newly rechristened Seaport District, I found Jean-Georges Vongerichten’s bilevel piscatory tribute to the old Fulton Fish Market, and he honors the site’s history—recalling how he began patronizing the market in 1986 and leaning on Gilbert Le Coze’s insistence that “the small boats leave in the morning and come back by noon” to ensure peak freshness. Under executive chef Noah Poses the menu is a mix of raw and cooked seafood, including Florida-red-snapper crudo with rhubarb and avocado, buckwheat-crusted redfish, a fritto-misto salad with pickled cherry peppers, crispy seafood rice with paprika aïoli, yellowfin-tuna tartare with yuzu-mustard sauce, seared Carolina tilefish with leek-turmeric emulsion, wild-striped-bass crudo with habanero vinaigrette, and warm octopus with fresh mozzarella, while raw materials like Boston mackerel, grey sole, sardines, and pufferfish are on display. I came to Austin for a couple of days, and this place truly made my trip memorable. The service was amazing! Recep kindly guided us to the Fulton Lobby Bar, and a special thanks to Volkan who took great care of us there. We tried a few dishes and cocktails — everything was delicious and flavorful. We also loved the atmosphere and the live music. Highly recommend!

Fulton, located inside the Fairmont Hotel in Austin, is a beautiful spot with great decor and an inviting atmosphere. The staff is incredibly attentive—especially my server, Olivia, who made the experience even better. It’s quiet, comfortable, and a perfect place to get some work done if needed.

Stopped in on a Friday evening for a drink and had a really pleasant experience. The atmosphere was lively with great live music that added to the overall vibe. I mentioned I was in the mood for something with mezcal, and the host brought over a mezcal sour. It was a really well-balanced and enjoyable drink. The host also recommended the chicken nuggets. They were not quite what I expected, but they were actually very good and flavorful. Service was friendly and attentive. Overall, it was a nice and relaxed visit. I would definitely go back.

We stopped in at Fulton before a recent dinner reservation at Garrison. It's the "lobby bar" in the Fairmont Hotel. Very nice, comfortable and welcoming social gathering space. The center piece of the space is the large live oak tree in the middle of the area. Pretty cool! They serve light food there all day, but we were there just for cocktails. Service was good. The drink menu is filled with off -the-chart specialty cocktails, and the prices were not bad. Expansive wine list as well, including both Old World and New World offerings. We would stop by again when in the area.

We had an amazing experience, largely in part to our bartender, Kevin J. He was incredibly kind and welcoming and genuinely seemed like he really enjoyed chatting with us. He was happy to make suggestions and made the best Hillstone martini I’ve ever had! The live music was also a great touch!

Had their Pumpkin Spice Espresso Martini during my stay and it was probably one of the best hand crafted cocktails I’ve ever had. Quick and fast service, although during evening hours it can be a little noisy and crowded. Cocktails average $15-$20.

The service was amazing! I really loved the live music and the large windows see the rain! My only issue was I ordered a well done steak (I don't like to see red)... when I got to the middle of the steak I noticed it was still red but at that point I just didn't want it anymore and gave the rest to my spouse he didn't mind. Overall a decent experience.

Today I stopped by to have a few drinks. The bar was clean and bright. It is welcoming with a relaxing atmosphere. There is a large tree in the middle of the lounge. The bartenders were friendly and knowledgeable of the drinks. They were also able to recommend drinks based on someone's typical drinking preferences. My 1st drink was the midnight margarita. This was a well balanced, complex drink that brought your palate on a journey with every sip. For my second drink I got the spiced daiquiri. This was not what I expected. It was more of a sweet dessert martini than spiced daiquiri. It was too sweet for my liking. I have a few days staying here so I look forward to trying some of their other drinks and some of their food over the next few days.

My family stayed at the fairmont while visiting so we had a few drinks here over the weekend and some food. I ended up getting a ceasar salad with salmon. The salad itself was really good but I had to ask for some extra dressing because it was pretty dry but their dressing is made in house and was so yummy. I added salmon and it was alright but pretty plain. Would've been a lot better if they did a blackened salmon or just seasoned it some more. Our servers were all very nice and the bartenders did a great job even when they were super busy. Overall, very cute nice hotel bar!

Nice ambiance and they made a certain cocktail they didn't have their menu. Waitress was sweet, but it seemed like maybe they were understaffed at the bar. It took a little while to get our drinks and it wasn't busy yet.

The lobby bar / restaurant at the Fairmont. I didn't order food, but the space itself is open and comfortable. Especially before actual opening hours, it's a nice space to lounge, read a book and drink coffee. It was also a nice space for my 2 year old to run around. She was fascinated with the pretty and tall plastic tree that serves as the focal point of the space. At night the space livens us with live music and a busy bar. I only ordered a beer, but I found the service to be good. It was a great casual environment to catch up with friends. We were in town for a conference and this was a good spot for everyone to meet.

Staff were super! The very young handsome bartender didn't know how to make my '80s drink but that was ok. I got something else and he made it a double. I got the brisket sliders and they were soooo good. Nice and juicy. They came with a side of sweet potato fries. Yummy! Served with two tiny squirt bottles of bbq sauce. . . just tried the spicy one cause that's me . Everything was good and there was live music. Had a great evening! Sorry, I forgot to take pictures.

I stayed at the Fairmont while I was in town for a wedding and we had a wonderful time. The rooms were clean and the bed was INSANELY comfortable! We spent a lot of time at Fulton, the lobby bar and restaurant. The space is very beautiful, especially this time of year with all the holiday decor. We came in the evening and both nights it was CROWDED! There was definitely a wait at the bar, but the bartenders were hustling to keep up with the crowd which I appreciated. I have to say, the martinis were worth the wait! Three olives and chilled to perfection. We did manage to snag a table and a server came around and periodically checked on us from there. Overall, super fun spot. Beware though, the hotel prices are no joke!

We visited on Christmas Day and it was relatively busy, but there wasn't a wait. We were walking around looking for a light lunch as we had dinner plans later in the day. We checked out Rainey Street, but almost everything was closed. The wife and I split the burger and fries. They split the order on two plates and I'm pretty sure they gave us WAY more than a normal portion of fries. The burger was cooked the way my wife likes, but a little much for my preference. It was still really good and the fries were crispy and salty. They gave us small, single use Sir Kensington ketchup and now I need to find where to buy that. I got a draft beer and an old fashioned. Their drinks, like their food, was a little on the pricy side, but it was a nice restaurant in a nice hotel.

Fulton is the only sit down restaurant open right now at the Fairmont Austin. They have a limited menu with some rotating selections during the week.. The COVID-19 precautions were in place where encouraged to wear masks until seated at the table. The staff did a great job with keeping the environment safe. The menu is viewed using your phone and contained a wide variety of options. I ordered the Roasted Half Amish Chicken with a glass of Cloudy Bay Sauvignon Blanc. The place was quiet with a few others dining in. Normally we sit at the bar but it was unavailable due to the virus. The Amish Chicken was delicious with the meat falling off the bone. The whipped potatoes were good as well. It was fulfilling. The highlight of our dining experience besides the tasty chicken was the bartender recognized us from the last time we were here on our wedding anniversary, and stopped by for a visit. This was true exceptional and never forget this.

This bar makes excellent cocktails, and the atmosphere is pretty and sophisticated. Seating is limited, but it's worth the wait. The holiday decorations are so beautiful, and the bar has a special feeling to it. The Old Fashioned Amigos is a must-do for tequila and scotch lovers.

A hotel lobby bar is meant for two things: starting the night (killing time waiting for everyone in your group to gather) or ending on (nightcaps, close to home). Fulton is a great location for either activity. Located in the lobby of the Fairmont in downtown Austin, it offers a curated menu of cocktails and other boozy beverages in which anyone should be able to find something they like. We had champagne and a cocktail (the name escapes me) and both were very tasty. The cocktail in particular was on the level of a high-end establishment that specializes in the like; that is to say, great execution! The ambiance is also relaxed but energetic and there was live music (chill, hang out music played/sung by a guy with a great voice). Plus, the decor gives you many things to gaze upon and fill any awkward pauses in conversations that may pop up. Normally I could take or leave a lobby bar but Fulton impressed me. I can definitely recommend it as a spot to begin or end an evening out.

Great people watching spot- though beware at night because drunk people just cut over the host stand and sit wherever they want. Our waitress was very nice, from MD and really dealt with these inebriated people well. We didn't order food but I did have an amazing drink with the honey ,lemon, and vodka- it tasted like tea you have when you have a sore throat. Otherwise the bar is usually completely packed with people from conventions and events so its quite loud.

I had a terrible experience at the Fulton. I was staying at the Fairmont and stopped downstairs for lunch. The service was awful. First off, the hostess didn't understand any english. She had no idea what I was saying in regards to getting a table. In addition, there was no waiter servicing the table and when the guy finally stopped by to ask what we needed...he brought nothing to write down the drink orders. No waters were brought to the table despite asking multiple times. In addition all the food and drink orders came out at different times. The people who got their meals first finished before the next couple people even received their food. I definitely would not recommend anyone wasting their time or money on eating here. It was the worst experience I've had at a restaurant in a long time.

At first I was confused and wanted to check my GPS to see if was in LA or NYC because they were tryna charge me like $20 per cocktail, but then I remembered I'm in the lobby bar of one of the fanciest hotels in Austin. Also I came here of my own volition and I'm not even staying here so i don't know why I'm complaining. The cocktails are definitely pricey, for Austin at least, but you get your money's worth of alcohol. Each cocktail has at least 2-3 drinks worth of alcohol because after 2 I was three sheets to the wind.

The Bloody Mary well somewhat tasty it wasn't something I'd go back for. A little on the pricy side of things for the three drinks you get and I love bloody Mary's so I think it's very safe to say this is just your run of the mill average mix. Not made in house or anything special. Though we didn't order food the restaurant it's self was very busy! The staff was very friendly and helpful and seemed to be following the "covid protocol" (not that it matters to me). That's why the three stars.. for staff not the drinks. Maybe I'll give them another shot on the next stay at the Fairmont.

Super sick place, as a bartender I've gotta be one of the more picky people with my cocktails. Coming from San Antonio, Im upset I haven't heard of this bar beforehand. Kyle killed it and put up with all my obsolete questions.. Come to stay, come to drink.. you'll be pleased with both.

The Fulton is a gorgeous bar off to the side of the Austin Fairmont Hotel lobby. They have live music, comfortable seating, and an impressive drink list. My boyfriend and I whiled away hours under their lighted oak tree, listening to the live piano jazz, nibbling on hors d'oeuvres and sipping our drinks. A great place to relax, unwind, and just spend time in a luxe setting.

Wow. Here is my love letter to their Fulton chicken nuggets. Dear Nuggs, I can't begin to express how you make me feel. When I first saw you I thought "wow what a shiny piece of chicken". But I underestimated you and your ability to make me feel like no other chicken has me feel before. Even on my worst day I pick Chick-fil-a. But today is the day (starfish from Finding Nemo voice)! You were juicy, you were sharp in flavor, you were strong and crisp, and brave in vulnerability. You are everything I didn't even know I needed . It is disrespectful to dip you in anything Dijon, but it's exciting to see you pair so well with the honey dipping sauce and the Sriracha Aioli dipping sauce. If you ever want to experience anything close to real peace and love (dramatic), please go get some Fulton Chicken Nuggets. Sincerely your biggest fan.

Basically, I'm only making this review to talk about these nuggets bruh. These are the tastiest little guys I've ever had in chicken nugget form. The sauce was so tangy and delicious. I think I might stay at the Fairmont again just for these nuggets. We also had great service, wonderful Crystal champagne, and great charcuterie but nothing compares to these nuggets. This bar is so beautiful and it is located in Fairmont hotel. I landed after a long flight and really needed a drinks. My server, Jim was so good with recommendations. He also gave me tips about austin since it is my first time in the city. I was waiting for my friends for 3 hours to arrive but Big Jim was so good to check in on me. His customer service is impeccable and this will be my go to hotel because I love hotels with great restaurants and bars. If you come to this place, make sure to request Big Jim as your server. Can't wait to come back!

Stayed at the Fairmont a couple of times after fund-raising events. Both times I made sure to stop at Fulton. Their bar is spacious and airy with a lot of glass overlooking Red River (and people on scooters, of course). Fulton has a great wine list, custom cocktails and a lot of friendly and knowledgeable staff. Their food menu has some very tasty and relatively affordable fare as well. The cheese board is excellent. The beef tartare was okay but honestly the crostini outshined the beef. The staff is very attentive. The edge of the seating area sort of blends into the lobby and I'd paused and sat down on a couch just to rest a second and someone was asking me if I'd like a menu within seconds. It was tempting to change plans and hang out yet another time but I had to decline. It's a good place to chill out and enjoy a glass of wine and some tasty bites when you're down near the convention center!

I get it, we're here in the middle of a winter storm but this is ridiculous. The prices ? The options? The quality? I'm actually in shock I'm spending close to $100 for this. They are absolutely taking advantage of their guests and the situation. We literally have nowhere else to go to get warm food. This is what we get at the Fairmont in Austin, TX. I thought this was a classy hotel. First the deli sandwich fell apart and had shredded cheese- $15. The tomato bisque and grilled cheese was totally cold, this was $18. This is absolutely insane and no way to treat your guests. I'm not asking for a 5 star meal, but This is laughable. I will never support this hotel. again. Period. I feel like I'm at the Fyre Festival. Oh btw, this is after waiting 3hrs on a waiting list only to tell us they lost our reservation. Yeah I am staying here too....

While the pictures of this place looked very promising on line, it was a very different story in person. The music was way too loud, bizarre dartboard art that looked more like it belonged at the YMCA, and low quality overpriced food are what you'll experience if you go here. Very disappointing. The one saving grace was our server who was very friendly and attentive. I highly recommend that you think twice before dining here.

We stayed at the Fairmont for our anniversary and decided to go to the bar for a drink and quick snack and I'm glad we did. Even though there was a large event at the hotel and a few big parties going on the bar staff was very quick and attentive. The drink were made and served with very little wait. We ordered the Mexican chicken nuggets for our snack based on a recommendation from the check in staff at the hotel and I'm glad we did. They were small nuggets similar to chick-fil-a but with a light spice. They are dressed like corn in a cup with mayonnaise, cheese, chili powder, and a dipping sauce on the side. These were hands down the best chicken nuggets I've had. The serving size was very generous and plenty for my wife and I to share.

We stayed at the Fairmont during our trip to Austin. The highlight of our stay at the hotel was Kevin, he's a great bartender and made us the best off menu cocktails we've had. We wish we could take him with us back to San Francisco!! Our favorites were the "JD" which is an Amaretto based cocktails and the "Ro" which is a chocolate martini based cocktail. He also gave us great recommendations which we tried and loved. Kevin needs a raise!!

Mexican chicken nuggets were amazing! Drinks were delicious. And I know you're not suppose to be on your phone when you're out for drinks, but it was super annoying none of our phones had internet while in there. How am I suppose to post my yummy drink to Instagram? Had to walk outside lol. If you plan on having more than one drink just go ahead and order them all the same time. It was quite clear there was not enough waiters for the amount of people in the bar. Shame on management.

I have had many great experiences here. Especially with the manager Mycherie? Total sweetheart and very welcoming. But last time I took my family in we had a horrible waitress Elliat. not kind. Not a single smile. Very rude when asked for a drink. Almost like it was an inconvenience. When a drink was requested and unavailable she made us feel stupid instead of making a recommedation. Staff things they are better than guests. Will not bring new guests here any more.

Really wanted to like this place. But, customer service is non existent. I went on a Thursday @ 4 PM, sat at the round end of the bar; there were maybe 8-9 customers and 4 bartenders. I was ignored. After 5 minutes I got up to leave, and a manger came over and made me my drink. After the drink was gone, I waited more than 10 minutes for my bill (or any service at all). Again I was ignored. Zero attempts at any eye contact; they even ignored my waving. The bartenders were happily chatting with the other patrons, but completely ignored me. Won't be going back there.
